Creamy Beet With Dill Soup

I did not have caraway seeds, so I substituted a tsp. of celery seeds (not toasted). I added a few carrots and used a small can of evaporated milk since half and half is not sold here in Peru. Hubby is on a soup diet, so this was a great change. Delish!

Beef Stroganoff III

Wonderful! I soaked the meat in red wine for a few hours. Cutting and marinating the meat ahead of time saved time in the evening. I used a pressure cooker for 15 minutes before adding mushrooms/sour cream to speed things up.

Banana Cake II

This is a cake with a lovely, light texture. A wonderful, delicious, cake! (I don't like banana bread). It took 45 minutes to bake in a 13 x 9 pan, perhaps because I live near 6,000 ft altitude. I reduced the baking soda a pinchful for that reason--maybe it helped--or not--the cake rose beautifully, in any case. I squeezed half of a lemon on the mashed bananas to brighten the flavor a bit, but that was due solely to my preference. I made a cream cheese frosting, applying it when the cake was still somewhat warm so that it was more like a glaze. My husband and I both had to have seconds! YUMMY! I won't even try other versions: If it ain't broke, don't fix it!

Pina Colada Cake III

The cake was good, but it sunk in the middle of the Bundt ring. I frosted this with cream cheese frosting with rum extract and patted coconut into the icing. I made rum sauce with coconut rum to serve over this cake and ice cream! I made this for my pastry chef daughter-in-law's birthday, and everyone liked it.

Melt-in-Your-Mouth Broiled Salmon

Before I marinated the salmon, I dipped brocolli spears in the liquid and then grilled the brocolli a few minutes before putting the faster-cooking salmon on. Wonderful!

Hasty Chocolate Pudding

I like pudding to taste more custardy, but this was great for a quick chocolate fix. I replaced 1/4 cup of milk with Bailey's Irish Cream, and added the pat of butter and a pinch of salt as other reviews suggested. I did this stovetop. It takes a little longer, but I like the process and control better. Just mix the dry ingredients together in the saucepan and add the milk (and Bailey's!), stir and cook over medium heat until it has bubbled one minute (turns thick). It filled 4 ramekins. I refrigerated two and served two warm with whipped cream and a ripe strawberry. ummmhmmm

Zesty Quinoa Salad

This is delicious! My husband and I love quinoa, and we try to eat meatless at least once a week. Since the protein is complete in this dish, we didn't need to add anything, but we did serve slices of avocado with it.

Chipotle Crusted Pork Tenderloin

Just made this! I used shallot powder because I was out of onion powder. Today wasn't good for grilling, so I preheated my oven to 425, then lowered it to 350 once I put it in. It took about 45 minutes. I did cover it with foil for 10 minutes after removing it from the oven. It is spicy, though (I live in New Mexico, so I like spicy food). My husband and I definitely give this 5 stars!
