Banana Pancakes I

For my first ever pancakes made from scratch, these were great. I love that there is so much that can be added to the recipe just to bump it up a notch. Chocolate chips, blueberries, strawberries... It is a great healthy start to the day and they turned out great. Make sure to cook low and slow so that the mushy texture isn't a factor and all is well!

Baked Potato Soup

I made this today for lunch at my friends house (as it has become tradition for me to cook whenever I come over) and soup is always a great idea. We loved it. I (OF COURSE) made my own little changes to make the recipe more my own. *I doubled the amounts of everything except for the pepper. *I added one small minced shallot. *I chopped the cooked bacon and added it to the soup instead of using as a garnish. *I added about 1/4 cup shredded sharp cheddar cheese to the soup. *Lastly, I enjoyed eating it as much as I enjoyed making it.

Beth's Spicy Oatmeal Raisin Cookies

I substituted Stevia in the Raw for sugar to make the cookies a little healthier (since there is so much butter/shortening) and they came out great. My picky daughter and her friends loved them and they were a HUGE hit at the PTA meeting!

Chicken Scampi II

YUM!!! Wow, so easy and tasty! I served it with wild rice and peas. It would have been delicious over pasta too though! Usually my family has leftovers of just about everything, but this was completely gone! **(The second time I made this, I added about a tablespoon of Philadelphia Italian Herb Cooking Cream and it added a perfect hint of creamy/cheesy goodness that everyone enjoyed!)**

Marinated Pork Chops

Wow... I really loved this. I did marinate overnight and the result was a tasty and juicy chop. My overly picky daughter had two helpings and asked if we could have this EVERY night for dinner. LOL That alone is enough reason to love this marinade, but the rest of the family enjoyed it just as much! (*Note: If you are lucky enough to be able to find the pork "Ribeye" cuts, I highly recommend them!!!)

Amazing Baked Spinach Dip

Yeah, I am biased, but in all honesty, I make the best spinach dip I have ever had. The best spinach dip I have had from a restaurant is from Mimi's Cafe, and this is STILL BETTER than that. It is a huge hit with parties and pot lucks!

Whipped Cream

Needs a bit more sugar and a little extra vanilla for that added pop of flavor, but aside from that, I love this recipe. I have used it for years now and shall stick to it (making my own adjustments, of course). Super simple too!

Maple Cream Cheese Frosting

This is wonderful. I love maple flavor, so I added a bit more. I also tried combining this recipe with the recipe for whipped cream cream cheese frosting. I LOVE it and so does everyone that I have made it for.
