My favorite things to cook
Pretty much anything with potatoes, chicken, pasta, cheese, beef... Hmmm... Everything! LOL
My favorite family cooking traditions
My family makes an amazing Filipino fried rice that puts any Chinese place I have ever tried to shame... We make it for my birthday and usually for Christmas too! We try to keep things varied, but since I started my own family, it is more about finding new and interesting traditions to create rather than simply maintain.
My cooking triumphs
I make an incredible spinach dip and have always been the designated grilled cheese maker in the family! I am pretty darn good at making anything I set my mind too. I have a more than decent sense of taste and a knack for making adaptations that make recipes better (in my opinion).
My cooking tragedies
I accidentally added a full tablespoon of salt(rather than sugar) and 1/2 a teaspoon of sugar (rather than salt) to cornbread the very first time I made it... I was 11 though.

Banana Pancakes I
For my first ever pancakes made from scratch, these were great. I love that there is so much that can be added to the recipe just to bump it up a notch. Chocolate chips, blueberries, strawberries... It is a great healthy start to the day and they turned out great. Make sure to cook low and slow so that the mushy texture isn't a factor and all is well!

White Peachy Sangria
Without the brandy, it will taste okay. However, adding brandy gives the Sangria more of a kick and a depth of flavor. I personally wouldn't leave it out (I love adding apricot brandy to this white recipe!), but make it your own! The great thing about recipes is that they are just a starting point.

Beth's Spicy Oatmeal Raisin Cookies
I substituted Stevia in the Raw for sugar to make the cookies a little healthier (since there is so much butter/shortening) and they came out great. My picky daughter and her friends loved them and they were a HUGE hit at the PTA meeting!
