Maple Walnut Fudge

Very easy, extremely delicious fudge! Literally melts in your mouth. I got a lot more than 50 pieces - it's so rich a small piece is enough (if you can resist more!).

Pecan Pie Muffins

These are awesome! I served them at a party on a platter with a bowl of Cool Whip in the middle. A double recipe was gone in no time. I did not beat the eggs before adding the butter with the first batch. They tasted good, but they turned out looking much better the second time when I did beat the eggs beforehand. Very good recipe.

Raspberry Liqueur Valentine Cookies

We thought these were very good - the dough was very was to work with. I followed the recipe exactly. I think it will be my recipe for cut-outs for now on. The frosting had very good favor (I might add even a little more cherry jello next time). I don't think I beat the egg whites long enough because it was not very fluffy; regardless, I added some more powdered sugar and it thickened up fine. I doubled the recipe (made a lot) and all were gone in about two days. Everyone liked them and they looked great.

Baked Pineapple

Who would have thought pineapple and cheese could taste so good together? The flavors blended wonderfully. I also drizzled about a teaspoon of butter over the cracker crumbs and the whole thing turned out great - everyone loved it. We had it with grilled salmon with an Asian soy sauce glaze - delicious!

Garlic-Lemon Double Stuffed Chicken

Very good recipe. I used Boursin cheese instead of cream cheese. I used a 5 oz clunk of Boursin for 6 chicken breasts and shredded the cheddar (extra sharp) - it was DELICIOUS! I ended up with way too much bread crumb mixture and had to throw a lot out, though. Will definitely make again. Everyone loved it!

Broiled Tilapia Parmesan

I made this recipe exactly as written, except used bottled lemon juice because I did not have a lemon on hand (used about 1 1/2 tbsp), and had only 1.5 pounds of fish - it was EXCELLENT! Makes me hungry for it just writing this!
