Whole Grain Pancakes

These were the best "healthy" pancakes I've made. I added 1/2 tsp salt and used "sour milk" instead of buttermilk. I let the batter sit for a few minutes before starting-they cooked well and had a great taste and texture. Thanks!

Teriyaki Salmon

We loved this! It was great to find a marinade that didn't have sugar in it and still tasted good. I marinated for about 1 hour and then broiled for less than 6 minutes. So tasty and easy!

Big Ed's Cajun Shrimp Soup

We love this soup! We use broth instead of water, add a couple of stalks of celery and onion instead of green onion, and add a can or two of clams in their juices instead of the clam juice. You can make it as spicy as you want and as liquidy (or not) as you want. Absolutely delicious-and healthy, too!

Berry Banana Smoothies

This was a fantastic recipe-without the honey! The fruit was definitely sweet enough on its own! I ended up using only 1 cup of vanilla yogurt (didn't know how many cups was in each container-oops), maybe 1.5 or 2 cups of strawberries, and 2 handfuls of ice. So delicious and healthy! OH-and this made enough for FOUR tall mugs full :P Way too much for a snack for 2 people!

Extreme Chocolate Cake

This was a-mazing. I'm thrilled to have finally found a chocolate cake that is rich but not (too) sugary! The icing was fantastic and even with all the powdered sugar it still didn't taste only like powdered sugar! Just incredible. The only thing I changed was I used 1/2 cup butter instead of oil. I did have problems getting the cakes out of the pans...and then when I started icing 1/8 of the cake just crumbled off and wouldn't be pasted on with icing. I've never had such a cake fiasco! I don't know if that was because of the butter or not...I'll have to try it with oil and see if it holds together better. But that is no reason not to try this recipe! It was so moist and tasted so good I didn't care that it looked like cliffs that had fallen into the ocean ;) Also, I didn't do 4 layers-I don't think that would even have been possible with the shape of my cakes :P There was extra icing, which was great-I'm always scared I'll run out! Oh, and I baked, cooled, and frosted the cake 1 day before I served it-SO GOOD! I plan to use the icing separately for a less chocolate cake in the near future :)

Sausage and Bean Ragout

This was fantastic! So tasty and satisfying. You don't need oil at the beginning-the meats will have enough (even lean ground beef). I used dried basil and 2/3 cup dried white navy beans (2 cups after I cooked them). I omitted the pasta and cheese (not in the diet). I also confused my grocery list and ended up with 1 plain can of diced tomatoes, so I used one seasoned and one plain and just sprinkled in some extra oregano (didn't think it needed more basil or garlic :P). This had so much flavor and tasted great days later and even after being frozen and defrosted.

Grilled Cheese Sandwich

Thanks for laying the steps out ;) I've never made grilled cheese before, and it went really well. The cheddar made for a rich-tasting sandwich. Just make sure you let the butter sit out for a while before trying to put it on bread-otherwise, it will be too cold and will tear the bread :P

Spicy Garlic Salmon

This was very good. I used Dijon mustard (all I had) and red chile rings and it didn't really make a paste-more of a sauce, which was fine. They cooked for about 15 minutes and were spicy (I gave the chile rings to my husband and he loved it) and delicious. The foil in the baking pan was a genius idea-clean-up was so easy! I will definitely make this again.

Shrimp over Cheese Grits

Absolutely delicious! I cooked 3 strips of bacon, then added the vegetables and the shrimp. I also just followed the directions on the grits package (not instant) and added the cheese (cheddar) at the end. Such great flavors, even without the hot sauce (although I'm sure my husband liked it better with the spicy!).

Best Brownies

easy and delicious! I didn't add the frosting-it definitely didn't need it! I halved the recipes and put it in a loaf pan...I just didn't need 16 :P I cooked for 20 minutes and the texture was a bit crispy on top and rich and brownie-like underneath :) loved it! will definitely make again!

Classic Minestrone

This was very tasty. Instead of beans and pasta, I used a "minestrone mix" which had a few types of beans and rice (had to soak 12 hours and cook 1 hour before adding to the soup). Regardless of that change, the vegetables and amounts were perfect and we thought it tasted good both right away and after a few days in the fridge. I loved how fresh it was :) I felt like I made a fancy dish, but all I did was chop up a bunch of vegetables.

Peanut Butter Chocolate Chip Cookies II

This recipe was nice and simple and the cookies had good peanut butter flavor. I used regular chocolate chips-and could have added a few more ;) I ended up cooking for 7 minutes and cooling on the sheet for 7 minutes so they didn't fall apart too easily, but I think they would have been better if I had followed the recipe and cooked for 6 minutes and then cooled on the sheet for 10 minutes or so. I was just in a hurry to make the next batch...poor decision! Good recipe, though :) I'm sure these won't last long!

Applesauce

great, easy recipe! I also found that my applesauce was already sweet-but they were slightly tart, so I added just 2 tbsp of sugar. delicious while warm, kind of weird sour taste the 2nd day, but that went away and it has lasted well in the fridge :) I hope I never have to buy jarred applesauce again.

Chocolate Chip Cheesecake I

This turned out great! I chopped up about 1.5 cups of dark chocolate into chunks. Because they were in various sizes, I did not use the flour to coat them. I did put about half of the chocolate into the batter and half on top. I think it baked just fine just on the oven rack, but it did have cracks on top-but like someone else said, they were pretty much covered up by the chocolate chunks. Someday I may try a water bath if I need a smooth top, but this worked great. I made it a day a head so it would have plenty of time to chill. Everyone LOVED it-we ate 2/3 in one day :P It was nice and thick and cream cheesy but chocolately too-a wonderful mix! I will definitely make this again :)

Whole Wheat Beer Bread

this was so easy to make and absolutely delicious. I didn't change a thing and used an oktoberfest beer. it tasted best when warm-even after being microwaved ;) it's super dense, though, so very filling!

Pork Chalupas

absolutely delcious recipe! I had to ask the butcher for a 4 lb roast, but it was well worth it (I can't imagine ever needing a 9 lb roast!). I didn't need to add any water to the beans (I did soak them overnight), so it really just needed time to cook. the meat was perfectly cooked after 8 hrs and shredded really easily. I served over fritos, as I learned from my mom, and added diced tomato, chopped onion, cheddar cheese, and salsa. next time (and there WILL be a next time!), I'll either ask for a smaller roast or add more beans (just to up the ratio). I'll also probably use less salt, since I serve it with chips. and, finally, I'll invite a crowd! we have a LOT of leftovers! (but I'm so excited to eat them!)

Baked Brie in Puff Pastry

Remember to thaw your puff pastry before you use it! I tried thawing it in the microwave and it ended up messy, but still tasted delicious. I added seedless raspberry preserves and then the almonds. I also brushed an egg white over the puff pastry before I cooked it-just don't use all of it if you don't need it-it will end up tasting slightly egg-y! otherwise, a delicious recipe that everyone was raving about :)

Baked Beans II

These were great-and it was so helpful that they could cook on the stove (and relatively quickly) while the meat was in the oven. I ended up only putting in half of the brown sugar, ketchup, and mustard and we thought it had lots of flavor. Just finishing up the leftovers now!
