Quick and Easy Brownies

I decreased the flour to 1 cup and am so glad I did! I think they would have been too dry with the full amount. but watch out!! these cooked for a full 50 minutes in my oven-after 30 minutes the inside of the pyrex still looked like jello pudding :( so much for quick!

Three Bean Salad I

I made this for a company holiday potluck. it made a LOT of bean salad (I should have known, with 5 types of beans!), but about half was eaten, which I think is pretty good since there were a bunch of other salads there. I made this about 2 days in advance and it definitely tasted better the longer it sat in the fridge. I used apple cider vinegar and regular mustard, not dried-just make sure you use about twice as much as dried since it's not as strong. overall, it was pretty good. maybe a bit too onion-y for those who don't like their breath stinking all day ;)

Chocolate Crinkles II

These weren't bad, but they could be better. I put them in the freezer for 45 minutes instead of in the fridge and they were super easy to work with-but they got more sticky and fudge-ier the longer they were out, so work fast! Also, I think next time I make them I'll add chocolate chips or something. Oh, and I won't grease the cookie sheets-it ended up being a mess and seemed unnecessary. Nice and chewy on the inside and slightly crunchy on the outside. It will be fun to mix these with our other holiday cookies.

Grilled Cheese Sandwich

Thanks for laying the steps out ;) I've never made grilled cheese before, and it went really well. The cheddar made for a rich-tasting sandwich. Just make sure you let the butter sit out for a while before trying to put it on bread-otherwise, it will be too cold and will tear the bread :P

Flavorful Tomato Soup

I thought this would be good because it already uses a pre-made soup and adds spices. But I doubled the recipe and still couldn't taste the spices (definitely could taste the onion, though!). I'm not sure it needed that much milk-the canned soup was already thick enough and maybe it took away from the flavors of the spices.

Garlic Crab Artichoke Dip

Honestly, this dip had no flavor. I used cream of mushroom w/roasted garlic soup and cream cheese instead of mayo. First of all, if you use cream cheese, make sure you thaw it out before you mix all the ingredients-otherwise, there are pockets of cream cheese. After cooking for 30 minutes, most of the dip was not even warm. I cooked it longer, then had to confer with my husband to see how to make it better-tasting. We added a generous amount of garlic powder and cayenne. And then extra cayenne and some black pepper. Finally, it was edible and we ate it with pita chips. Just as good reheated the next day. But I was really disappointed with the original outcome.

Black-Eyed Pea Gumbo

I added carrots, a can of corn, and a beef smoked sausage (cooked in the pan before everything else was added) and forgot the green pepper. we were surprised that there were no added spices in this dish! I followed other suggestions and added 2 or 3 tsp cajun seasoning and 1 tsp cayenne and everyone loved it! my husband doesn't like corn, so next time, I'll skip the corn and add the green pepper. but this was a great new years dish-easy to assemble and let sit while watching football ;)

Death By Chocolate III

this turned out just how I had planned. I definitely had problems chopping up the toffee bars...anyone have any suggestions? also, next time, I'll use more toffees and less cool whip. make sure to let it sit in the fridge for a day or so-the flavors blend together better and it ends up tasting amazing!!

Baked Brie in Puff Pastry

Remember to thaw your puff pastry before you use it! I tried thawing it in the microwave and it ended up messy, but still tasted delicious. I added seedless raspberry preserves and then the almonds. I also brushed an egg white over the puff pastry before I cooked it-just don't use all of it if you don't need it-it will end up tasting slightly egg-y! otherwise, a delicious recipe that everyone was raving about :)

California Sherry Chicken

I was pretty disappointed with this recipe-especially after all the time it took to prepare the vegetables! I added mushrooms and doubled the sherry and broth, served with quinoa and scalloped potatoes...the chicken was okay and so were the vegetables-but neither had much taste! after emptying my sherry bottle into this dish, I expected something more flavorful.

Pork Chalupas

absolutely delcious recipe! I had to ask the butcher for a 4 lb roast, but it was well worth it (I can't imagine ever needing a 9 lb roast!). I didn't need to add any water to the beans (I did soak them overnight), so it really just needed time to cook. the meat was perfectly cooked after 8 hrs and shredded really easily. I served over fritos, as I learned from my mom, and added diced tomato, chopped onion, cheddar cheese, and salsa. next time (and there WILL be a next time!), I'll either ask for a smaller roast or add more beans (just to up the ratio). I'll also probably use less salt, since I serve it with chips. and, finally, I'll invite a crowd! we have a LOT of leftovers! (but I'm so excited to eat them!)

Slow Cooker Split Pea Sausage Soup

I made this with beef smoked sausage, 3 cups of chicken broth, and 6 cups of water-and it was WAY too much liquid. It also didn't have any flavor! I cooked it longer to try to boil out the liquid and it ended up making the peas disappear-so we were eating pea-colored watery soup with no flavor. I was really disappointed, but my husband and mom liked it as is for some reason. I liked how easy the recipe was, but if I try it again, I'll use less liquids, less potato, and add some extra spices-or even just salt and pepper.

Dark Chocolate Cake I

I love a good chocolate cake-even a dense one, but this wasn't what I expected. Granted, I didn't have 3 9" cake pans (who makes a 3-tiered birthday cake anyway?), so I made it in 2 and had to cook longer to get the middle not to be soupy. But overall, the cake wasn't crumbly but wasn't mosit, light, and fluffy either. Everyone thought it was good (but rich), but I don't think I'll make it again. Definitely don't eat it by itself-I relied on icing to make it a bit more moist (still not enough for me).

Rich Chocolate Frosting

This was okay-I halved it and added 2 tbsps of milk at a time (but did not need to exceed the 1/2 cup needed). It was super sugary, and I probably could have cut the amount of powdered sugar. I made a very tall 2-tiered 9" cake and kept piling the icing on...and I still had to eat some plain to avoid waste-next time I'm definitely going to make cupcakes or something to use up the extra icing. Kind of felt sick after eating so much sugar...

Oatmeal Waffles

I made my own buttermilk (milk & vinegar) and used honey instead of molasses. The mix was a weird texture-liquid but with chunks of oats. I made pancakes and I have to say I wasn't that impressed. I thought I'd be happy with the "heathiness" of the recipe, but I didn't really feel like it added anything to the meal.

Shrimp over Cheese Grits

Absolutely delicious! I cooked 3 strips of bacon, then added the vegetables and the shrimp. I also just followed the directions on the grits package (not instant) and added the cheese (cheddar) at the end. Such great flavors, even without the hot sauce (although I'm sure my husband liked it better with the spicy!).

Grilled Pork Tenderloin with Balsamic Vinegar

I followed the directions and marinated for 30 minutes, then tried to cook until 155 degrees...it cooked for almost an hour and still didn't get up to 155 :P Maybe I didn't have the grill hot enough...but also the marinade wasn't really that strong. It was really easy, though, so I'm sure I'll try it again-I'll probably add more garlic and marinate longer and turn up the grill. I'm just scared it wil dry out even more...
