absolutely delcious recipe! I had to ask the butcher for a 4 lb roast, but it was well worth it (I can't imagine ever needing a 9 lb roast!). I didn't need to add any water to the beans (I did soak them overnight), so it really just needed time to cook. the meat was perfectly cooked after 8 hrs and shredded really easily. I served over fritos, as I learned from my mom, and added diced tomato, chopped onion, cheddar cheese, and salsa. next time (and there WILL be a next time!), I'll either ask for a smaller roast or add more beans (just to up the ratio). I'll also probably use less salt, since I serve it with chips. and, finally, I'll invite a crowd! we have a LOT of leftovers! (but I'm so excited to eat them!)
