Black-Eyed Pea Salad

I made this recipe as written (except I used dried/cooked peas instead of canned), and I didn't think it was anything special. I was expecting something awesome from the reviews...I thought it was bland and was basically a bunch of things thrown together. Nothing special and missing some kind of kick of flavor. No one wanted to eat it.

Divine Hard-Boiled Eggs

Classic Minestrone

This was very tasty. Instead of beans and pasta, I used a "minestrone mix" which had a few types of beans and rice (had to soak 12 hours and cook 1 hour before adding to the soup). Regardless of that change, the vegetables and amounts were perfect and we thought it tasted good both right away and after a few days in the fridge. I loved how fresh it was :) I felt like I made a fancy dish, but all I did was chop up a bunch of vegetables.

Chunky Cheesecake Brownies

I can't decide how I feel about these. They were tasty, but not super chocolate-y. Mine ended up being more cake-like out of the oven and we ate them forks. Then after they were refrigerated they were almost fudge-like. It kind of confused me and I can't figure out which version I like better. If you're okay with that, it makes for a different sort of dessert (which was what I was looking for). I melted the chocolate chips in the microwave and used only 1/2 cup chocolate chips in the cheesecake part. I was worried about how they would look since the chocolate didn't spread very well over the cream cheese, but with the marbling it turned out surprisingly attractive. It was tasty and easy to make-other people enjoyed it more than I did, so I may end up making it again ;)

Balsamic Baked Tilapia

This was a good idea, but in the end the tilapia just tasted like fish :P The sauce just didn't stick to the fish enough and the cheese (I used feta) didn't add much to the dish.

Peanut Butter Chocolate Chip Cookies II

This recipe was nice and simple and the cookies had good peanut butter flavor. I used regular chocolate chips-and could have added a few more ;) I ended up cooking for 7 minutes and cooling on the sheet for 7 minutes so they didn't fall apart too easily, but I think they would have been better if I had followed the recipe and cooked for 6 minutes and then cooled on the sheet for 10 minutes or so. I was just in a hurry to make the next batch...poor decision! Good recipe, though :) I'm sure these won't last long!

Mushroom Pie

This was okay. I only had 1/2 a package of puff pastry, so I filled it and folded over the edges. I used bacon cubes and didn't brush the top with egg (there wasn't much of a top...). It ended up a bit runny, but had a rich flavor.

Stove-Top Macaroni and Cheese

This was pretty good! I liked it better than a baked recipe I tried a few weeks ago...and cooking it all on the stovetop helped free up my tiny oven for all the other Thanksgiving foods that needed to be cooked! I used about 9 oz macaroni and longhorn cheddar cheese (no paprika). Like someone said, just keep stirring the flour/butter/milk mixture the whole time and it will stay creamy and thicken up a bit. I'll keep this one around!

Roasted Kohlrabi

This was easy and tasty. I forgot to stir the strips...so they weren't evenly cooked and they weren't done at 30 minutes, but I wasn't sure if I should cook them more...so they weren't really crispy, but I think that was my fault. I would make this again :)

Salmon with Brown Sugar and Bourbon Glaze

We thought this would be strong and tasty, but really it was just sweet (too sweet). You could smell the bourbon while it was cooking (for much less than 5 minutes a side!), but when it was done it didn't tast smoky, just sweet. It was something different, but not what we like or were looking for, unfortunately.

Chocolate Chip Cheesecake I

This turned out great! I chopped up about 1.5 cups of dark chocolate into chunks. Because they were in various sizes, I did not use the flour to coat them. I did put about half of the chocolate into the batter and half on top. I think it baked just fine just on the oven rack, but it did have cracks on top-but like someone else said, they were pretty much covered up by the chocolate chunks. Someday I may try a water bath if I need a smooth top, but this worked great. I made it a day a head so it would have plenty of time to chill. Everyone LOVED it-we ate 2/3 in one day :P It was nice and thick and cream cheesy but chocolately too-a wonderful mix! I will definitely make this again :)

Squash Stuffed Chicken Breasts

This was just okay. It took forever to chop up the acorn squash, and when I saw I only needed 1/2 a cup I felt super frustrated. Of course, I only used 2 breasts, so I went ahead and used the full squash and onion and green pepper (no celery because mine was dead) and just piled it all on top of the chicken. I decided to coat the chicken with flour and brown it...then I pounded it flat and rolled it up with some of the stuffing inside (secured with rouladen pins). Again, then I piled the rest of the veggies/cheese on top. I cooked about 20 minutes (covered). I loved the soft, moist texture of the chicken and the fresh and cheesy flavor, but my husband didn't think it had enough flavor-maybe if I used some kind of marinade before browning the chicken?

Big Ed's Cajun Shrimp Soup

We love this soup! We use broth instead of water, add a couple of stalks of celery and onion instead of green onion, and add a can or two of clams in their juices instead of the clam juice. You can make it as spicy as you want and as liquidy (or not) as you want. Absolutely delicious-and healthy, too!

Oatmeal Chocolate Chip Pancakes

I halved this recipe but that was a mistake-"3" servings wasn't enough for 2 people (2 pancakes each) :P Other than that, I used a bit of wheat flour mixed with white flour, then I used part of a chopped up bar of dark chocolate instead of chocolate chips (much tastier), and regular milk. I let the batter sit while heating the pan on low and I found the batter was almost too thick! Luckily, cooking on low helps pancakes cook a bit more evenly. We liked the taste and I liked that they were a bit healthier than regular pancakes-no eggs and no added sugar (other than the chocolate). The texture is a bit different, of course, but we enjoyed that they were a bit more substantial than the fluffier pancakes.

Colonial Brown Bread

This was easy and helped me use up some sour milk without needing to add butter and eggs, which was nice. It cooked well and was very sweet-good for eating by itself, but it doesn't really go with meals. Also, my husband complained that he could taste the bitter baking soda on the second day :P

Whole Grain Pancakes

These were the best "healthy" pancakes I've made. I added 1/2 tsp salt and used "sour milk" instead of buttermilk. I let the batter sit for a few minutes before starting-they cooked well and had a great taste and texture. Thanks!

Lemon Garlic Tilapia

I added extra garlic and sauteed it in the butter before baking the fish for about 12 minutes, but I didn't think it had much flavor-just tasted like fish. But it got points for using ingredients I always have on hand.

Basil Pork Chops

I think this name is kind of misleading...I couldn't taste the basil or chili powder at all...only the brown sugar, which kind of burned on top of the pork. But it tasted good anyway :)

Lighter Banana Muffins

I liked this recipe because it had simple ingredients. I made half because I only had 2 bananas. I also used 1/2 wheat flour and 1/2 white flour and added a dash of nutmeg. It was so thick I couldn't even stir in all the flour, so I added almost 1/2 cup of milk to get it to the right consistency. I used a greased muffin pan (no wasteful paper liners) and cooked for 18 minutes-it made 6 large muffins and they popped right out! The taste was good, but for some reason they had a strange smell...maybe it was the nutmeg. I will definitely make this again!

this was really easy and smelled good, but some of the flavor was lost by the time it cooked. my husband would have preferred it to be more spicy and he mentioned he wouldn't have used olive oil.
