Raspberry Oat Bars

These are fantastic. So easy to make, they look pretty, and everyone always loves these. I've used different flavors of jam (lemon, blueberry, raspberry champagne, peach) and they always turn out delicious, you can't go wrong.

To Die For Blueberry Muffins

SO good! Couldn't understand the directions, so I used a 1/3 cup of oil and a 1/3 cup of milk. With fresh blueberries, these were simply delicious! An easy recipe and they were really, really good.

Cucumber Sunomono

This was very good. I used a mandolin to make the slices. I added a sprinkle of black pepper, white sesame seeds, and red pepper flakes. Delicious!

Zucchini Cornbread Casserole

This is very good. I added diced yellow pepper, a little diced pickled jalapenos, some cooked and diced bacon, and 1/2 tsp of garlic powder. I salted, drained and squeezed the zucchini. I used mexican shredded cheese (1/2 cheddar and 1/2 jack). Will definitely keep this recipe and continue tweaking until I get it just how I like it. This is a keeper, I think anyone would like this.

Michael's Foccacia Bread

This was very, very good and super easy. I halved the recipe, instead of Kosher salt I used 1 tsp of table salt in the dough and none on top, on top I used sliced tomatoes, garlic powder, oregano, Parmesan cheese and sliced olives. Delicious, everyone loved it, this wil become a favorite.

Hot Italian Giardiniera

This was DELICIOUS! I made it exactly as stated, although I did half the recipe because I didn't need that much, then wished I had made the whole thing! Delicious on everything or as a little side to a meal. Great, great, will make this again and again!

Blackened Tilapia with Secret Hobo Spices

This spice rub is fantastic! I ended up making it, storing it in a Glad plastic ware little box, and using it on every type of fish I've cooked since and it's been wonderful every time! This spice rub is very good and worth having on hand to use every time.

Golden Rum Cake

Everyone raved about this cake. Everyone loved it, it is really really delicious. Next time I will chop the nuts a little more. It seemed like a lot of glaze going on the cake, but it was perfect. People said it tasted like rum cakes that you buy in the Caribbean. Will make this many more times.

Kentucky Butter Cake

GREAT! Really good, I made it exactly as the recipe called and it came out perfectly. This is delicious, moist, you'll love this if you like sweet cakes with more of a vanilla, plain flavor. This would be great with strawberries and whipped cream.

Big Soft Ginger Cookies

DELISH! Really, really great cookie. They were soft and chewy and had the perfect combination of flavors. They stayed fresh and moist. I followed the recipe exactly and wouldn't change a thing.

Catherine's Spicy Chicken Soup

Delicious!! I used vegetable broth instead of water. I only had beef bouillon cubes. I used 1 can of diced tomatoes. I first sauteed the onion and garlic in the oil until soft, then added all of the other ingredients except the chicken. I also added 1 tsp of red pepper flakes. 10 mins before serving I added packaged chicken tortellini. Wonderful, will make this many more times and try other combinations.

General Tsao's Chicken II

Wow! This sauce is really, really good. I did not have red chilis, so I used 1 tsp of red pepper flakes which produced moderate heat, could use more if you like. I also did not have peanut oil, so I used same quantity of crunchy peanut butter, the nuts ended up being a nice touch. This is a great sauce that I will use again for sure.

Marshmallow Fondant

Wow, okay, like most of the other reviewers, this was a first for me. I followed the recipe exactly. I will tell you this started out so unbelievably sticky that I had a very bad feeling about the outcome of this little experiment. After a couple of minutes of hopelessly trying to knead this sticky mixture (which by the way, I did everything by hand as I do not have a standing mixer with me right now), I stopped and let it rest and cool down a bit. After a couple of minutes, I started in again and it was like night and day. The mixture became able to be kneaded and everything went perfectly after that. I did have to use 2 more cups of powdered sugar to get it to the right consistency where it was no longer sticky when kneaded. It tastes really good! This recipe has inspired me to learn how to decorate cakes!

Cooked Fruit Salad Dressing

Really, really nice. Has a nice citrus-ey flavor, and very easy. I used a 1/4 cup of pineapple juice instead of the juice from the can because I used fresh pineapple.

Double Layer Pumpkin Cheesecake

This is amazing, I make it every year at the holidays as my alternative to traditional pumpkin pie which I feel like everyone eats but no one really likes. Then I started using this as a base recipe with different flavors ... I used this same idea but substituted strawberries and it was fabulous. So I'll continue to try other flavors, but will still always use this as my pumpkin pie recipe.

Indian Relish

Delicious! This was surprisingly very, very good. Everyone loved it and commented on it. Next time I won't cook it for as long as I did because it gets pretty hard and sticky. But the flavors are delicious. The smell of vinegar is overwhelming while you're cooking it, but it tastes fabulous.

Fish Tacos

I only used the batter portion of this recipe and it was very good. I used a light, white fish. I added 1 tsp of cayenne to the flour mixture. Then I fried corn tortillas and topped with a spicy cole slaw. FABULOUS! Very delish, everyone loved them.

Mexican Bean Salad

This was very tasty and got rave reviews. I made it as the recipe calls except I used bottled key lime and lemon juice. I found the dressing to be the right amount. I would make this again for sure and wouldn't change a thing. I thought this recipe was great and looked great, too, on the plate! Can serve this as a side with so many things. This is a keeper for sure.
