Super Easy Artichoke Dip

This is very delicious, I've made it many times for a slightly fancier dip. I sprinkle the Parmesan on top instead of mixing it into the dip. I've served it with twisted herbed breadsticks for a heartier appetizer.

A to Z Everything-but-the-Kitchen-Sink Chocolate Chip Cookies

These were good. I added Rice Krispies instead of corn flakes, and no chocolate chips since my crew won't eat chocolate. Instead of mace and cloves I used allspice and nutmeg.

Seminary Muffins

These were really good and certainly tasted "healthier" than a regular muffin. I did not add chocolate chips, I can see where these would be great with raisins, dried fruit, etc. I used pecan pieces instead of walnuts. These do not rise really at all, so fill your muffin tins accordingly. I will definitely make these again and try adding other things. These also were not very "spice"-ey, so I would probably add nutmeg, allspice, etc. next time to get a little more flavor going.

Cooky Cookies

FABULOUS!!! This is my new favorite cookie! I did a 1/2 cup of water and a 1/2 cup of oil just to make sure they weren't too rich or greasy, I used pecans instead of walnuts, and I used rice krispies instead of corn flakes. These are delish, moist, sweet but not too sweet, and perfectly wonderful. I put half of the dough in the freezer so will try to bake those off next week and hopefully that will work just fine as well.

Shanghai Noodle Salad

This was really tasty. I used 8 oz of linguine since that's what I had, and it was the perfect amount of noodles to sauce. I julienned 1/2 a zucchini, and a 1/4 each of red and yellow peppers. Then I shredded 1 carrot and added 1/2 a bag of shredded cabbage. I wanted a little bit more of a sweet and spicy sauce vs a strong soy tasting sauce, so I added another teaspoon of brown sugar. I used low sodium soy sauce and key lime juice which was all I had. Very tasty, very healthy, will make again for sure.

Caribbean Holiday Shrimp

These are really tasty. I left out the cilantro as I'm not a fan and I didn't feel like that matched with the other ingredients. Really very good. I served them over salad and another time over cold noodles tossed in a spicy Thai peanut dressing.

My first time out with my new pan. I wasn't too thrilled with this recipe, I'm going to keep looking and experimenting. I added 1 tsp of vanilla and 1 tsp cinnamon, which only made the batter a darker color that wasn't as pretty. I doubled the sugar and it still wasn't sweet enough. I did not put oil into the wells, simply sprayed with Pam and they didn't stick at all. I filled the cups up to the top and they came out perfectly round on both sides, nice shape, now just need to find the perfect recipe.

Pecan Pie

The people that like pecan pie and ate this one said it was very good and they ate every slice. They did say it was very sweet, but apparently that's how it should be. The crust needed to be tented in foil for the last part of baking as it got too brown. This was very easy to make and looked very pretty.

Catherine's Spicy Chicken Soup

Delicious!! I used vegetable broth instead of water. I only had beef bouillon cubes. I used 1 can of diced tomatoes. I first sauteed the onion and garlic in the oil until soft, then added all of the other ingredients except the chicken. I also added 1 tsp of red pepper flakes. 10 mins before serving I added packaged chicken tortellini. Wonderful, will make this many more times and try other combinations.

Blueberry Crumb Bars

Pretty good! These are pretty sweet. For the crust, I used half white and half brown sugar, 1 tsp of vanilla, 1/4 tsp salt, 1/2 tsp cinnamon, and butter instead of shortening. Then I doubled the amount of cornstarch and that was the perfect amount to get the blueberries to set. I'm sure I will make this again and try a different kind of berry.

Buttery Cinnamon Cake

Wow, this is tasty. I used 1 cup of white sugar and 1/3 cup of brown sugar, I used 1/3 cup of milk and 1/3 cup of applesauce, I upped the cinnamon to 1 tbsp, I used 1/2 tsp of salt, and I used butter instead of shortening. I did not glaze it and it was delicious as it was as we don't like things too sugary, but I'm sure a glaze would have made it even better for most people. I only needed to bake this for 35 mins. This is a keeper.

Cooked Fruit Salad Dressing

Really, really nice. Has a nice citrus-ey flavor, and very easy. I used a 1/4 cup of pineapple juice instead of the juice from the can because I used fresh pineapple.

Zucchini Pie

I could tell from the simplicity of the recipe and from reading the other reviews that this was not going to have enough flavor for my liking. Here's what I did and it turned out really good: I diced two med zucchinis and half an onion. I sauteed them in a little olive oil with garlic, salt, pepper, and lemon pepper for a few mins. Then to the batter I added 1/2 tsp salt, 1/2 tsp black pepper, 1 tsp of garlic powder, and 1/2 tsp of oregano. Then once in the baking pan, I sprinkled additional Parmesan cheese on top and seasoned bread crumbs. Will serve with sprinkled, melted cheddar over the top. Tomatoes would have added nice color, but I didn't have any this time, will try adding that next time. I just used Jiffy baking mix as that's all I had.

A Number One Egg Bread

This recipe itself has some issues. First off, there is no way this needs to bake for 40 mins. It probably was done after 20. And it was lacking in the sweetness of Hawaiian bread that I was looking for. Don't know if I would ever try this one again.

These are fantastic. So easy to make, they look pretty, and everyone always loves these. I've used different flavors of jam (lemon, blueberry, raspberry champagne, peach) and they always turn out delicious, you can't go wrong.

This was DELICIOUS! I made it exactly as stated, although I did half the recipe because I didn't need that much, then wished I had made the whole thing! Delicious on everything or as a little side to a meal. Great, great, will make this again and again!

Sam's Famous Carrot Cake

This was very good and moist. I added 1/4 tsp of nutmeg and omitted the raisins. I baked in bundt pan for 55 mins. This recipe would definitely benefit from cream cheese frosting as the cake itself is not very sweet. Very good carrot cake and will make again.

Cranberry Cake

This was okay in terms of the cake itself, I have not made the butter sauce yet but I'm sure it will make this much better. I added 1 tsp vanilla, 1 tsp kosher salt, and 1 tsp cinnamon instead of nutmeg to the batter. I baked it in mufffin tins, made 12 nice sized muffins.

Tuna Noodle Casserole from Scratch

This was really good. I made it basically as the recipe states. You really have to season the sauce before adding everything to it as it is only flour and milk and basically has no taste at all. I used a heavy dose of salt, pepper, garlic powder and a tiny dash of nutmeg. Threw in frozen peas right before baking. Did not use mushrooms as I didn't have any. Doubled up on the cheese on top. Very good, will make again!

Thai Noodle Salad

This was okay, but I would want to tweak the sauce if I ever made this again. As it was, I cut the salt in half and even with that it was way too salty. I think the rice vinegar would need to be reduced as well. Bottom line, too salty and not spicy enough, but it was a nice texture and a nice crunch with the fresh veggies, just needs a tweak.
