Best Ever Corn Muffins

These are really good. The vanilla gives them a nice sweetness. I add yellow corn kernels, diced jalapenos from the jar, and grated cheddar cheese to the batter before baking.

A Different Carrot Raisin Salad

This salad is truly very nice. I omit the raisins and walnuts, and add diced red or green apples and pineapple bits. I've used only white vinegar as I have not had cider vinegar. Lovely.

Ramen Coleslaw

This is really, really good, I've been making it for years. I add a little finely diced red onion for color and flavor. I mix the dressing into the salad a while before serving to let it marinate the cabbage, but then I add the Top Ramen noodles only right before serving so they don't get mushy and they hold their crunch.

Super Easy Artichoke Dip

This is very delicious, I've made it many times for a slightly fancier dip. I sprinkle the Parmesan on top instead of mixing it into the dip. I've served it with twisted herbed breadsticks for a heartier appetizer.

Orange Glazed Carrots

This was very easy and very good. I used a little less brown sugar than what the recipe called for. I cooked the carrots ahead of time and let them sit. Then I made the glaze, and then right before serving I added the carrots to the glaze and reheated.

Firecracker Grilled Alaska Salmon

Absolutely delicious. I boiled the marinade afterward to use as a sauce that I drizzled over the salmon and the plate. The best salmon I've ever tasted.

Strawberry Spinach Salad I

This is very nice. I'm giving it 4 stars because for me it was a little too sweet, I would cut back on the sugar, but it is a lovely recipe and you should try it. Almonds and strawberries are very nice.

Cinnamon Swirl Bundt Coffee Cake

This was a nice cake especially for those who don't like their coffee cake very sweet. It looked nice coming out of the pan and sliced on the plate. I will make it again, but next time I will drizzle some powdered sugar glaze over the top to give it a little more sweetness.

Marinated Chicken Breasts

This recipe did not work for me. I think sometimes people confuse "tender" with "mushy" when dealing with marinated meats. The chicken was so broken down that I felt it was just mush, maybe marinating it for less time would help, but I won't make this again to try it.

J.P.'s Big Daddy Biscuits

These do cook up big, I will give him that, but I find they don't have much buttery flavor and are not very flaky. I find I have to cut back on the milk as these get too sticky and need too much flour in the kneading process to get the right consistency. But overall, they are okay and easy to make which is nice in a pinch.

Michael's Foccacia Bread

This was very, very good and super easy. I halved the recipe, instead of Kosher salt I used 1 tsp of table salt in the dough and none on top, on top I used sliced tomatoes, garlic powder, oregano, Parmesan cheese and sliced olives. Delicious, everyone loved it, this wil become a favorite.

This was DELICIOUS! I made it exactly as stated, although I did half the recipe because I didn't need that much, then wished I had made the whole thing! Delicious on everything or as a little side to a meal. Great, great, will make this again and again!

Jamaican Jerked Chicken

Did not really care for this. This is not what I was expecting in terms of what I have tasted of jerk chicken. The marinade was not a nice looking color, and even though I doubled the jalapenos it still did not have very good flavor. Will not make again.
