Kentucky Butter Cake

GREAT! Really good, I made it exactly as the recipe called and it came out perfectly. This is delicious, moist, you'll love this if you like sweet cakes with more of a vanilla, plain flavor. This would be great with strawberries and whipped cream.

Grandma's Gingersnap Cookies

These were a huge hit! Everyone loved them. They did come out very flat, but like a store bought gingersnap would be. When I make them again I will make them from smaller balls because they do spread and flatten so much. Used 1/4 cup of sugar with 1 tbsp of cinnamon for the topping and that was the perfect amount.

Cooky Cookies

FABULOUS!!! This is my new favorite cookie! I did a 1/2 cup of water and a 1/2 cup of oil just to make sure they weren't too rich or greasy, I used pecans instead of walnuts, and I used rice krispies instead of corn flakes. These are delish, moist, sweet but not too sweet, and perfectly wonderful. I put half of the dough in the freezer so will try to bake those off next week and hopefully that will work just fine as well.

Raspberry Oat Bars

These are fantastic. So easy to make, they look pretty, and everyone always loves these. I've used different flavors of jam (lemon, blueberry, raspberry champagne, peach) and they always turn out delicious, you can't go wrong.

Pecan Pie

The people that like pecan pie and ate this one said it was very good and they ate every slice. They did say it was very sweet, but apparently that's how it should be. The crust needed to be tented in foil for the last part of baking as it got too brown. This was very easy to make and looked very pretty.

Banana Crumb Muffins

Really good! I used 2 1/2 bananas because they were large and very ripe, and I used 1/4 tsp of cinnamon. Very moist, very delish, and they looked pretty.

Delicious> I use vanilla instead of almond extract and I omit the dried fruit. Very moist, very good. This is now a staple banana bread for me.

Chipotle Mac and Cheese

This recipe is very good, I have made it several times and it's very forgiving and always tasty. I use a little more chilis than what this calls for as I love the heat. Reheats really well for leftovers.

Chicken Florentine Casserole

This was really good. I made the sauce a couple of days ahead, and then used shrimp instead of chicken, and this was very nice. Could work as a nice side dish as well with a protein. I used canned spinach and that was okay in a pinch.

Honey Bun Cake I

I don't know what to say about this recipe. I made it once and it was really good, everyone loved it. Then the next two times I made it, it did not turn out ... the top of the cake got too heavy with the brown sugar and stuck to the pan, and it broke apart trying to get it out of the pan. So I don't know that I will attempt this one again even though I know it can work out perfectly and that it is really good, just don't think I'll risk it.

Big Soft Ginger Cookies

DELISH! Really, really great cookie. They were soft and chewy and had the perfect combination of flavors. They stayed fresh and moist. I followed the recipe exactly and wouldn't change a thing.

Cooked Fruit Salad Dressing

Really, really nice. Has a nice citrus-ey flavor, and very easy. I used a 1/4 cup of pineapple juice instead of the juice from the can because I used fresh pineapple.

White Chocolate-Macadamia Nut Oatmeal Cookies

I didn't care for these. I used chocolate chips instead of white chocolate so maybe that was it, the flavor just tasted off to me and they were not very sweet. I have to say the texture was nice, I followed the recipe exact with the exception of the chips and I used butter flavored Crisco instead of butter, and they were large and a nice height, not flat. Don't know that I would make these again, if I did I would add more brown sugar and try the white chocolate chunks.

Sun-Dried Tomato Basil Orzo

Nice recipe. I did not have fresh basil, so I used marinated artichokes which obviously didn't give the same zingy flavor so I had to add some additional dried herbs to give it a kick. Served it cold with the Caribbean Holiday marinated shrimp recipe from this website. Beautiful meal sitting on the back of a yacht in the Bahamas.

Irish Cream Bundt Cake

Very delicious. Used Godiva white chocolate liquer instead of Baileys. Used sliced almonds for the nuts. Sweet, but not too much. Very moist. Would definitely make it again.

Fish Tacos

I only used the batter portion of this recipe and it was very good. I used a light, white fish. I added 1 tsp of cayenne to the flour mixture. Then I fried corn tortillas and topped with a spicy cole slaw. FABULOUS! Very delish, everyone loved them.

These were good. I added Rice Krispies instead of corn flakes, and no chocolate chips since my crew won't eat chocolate. Instead of mace and cloves I used allspice and nutmeg.
