Spinach Balls

These were good, these were okay, nothing too spectacular. I followed the recipe except I added more spices to try and get more flavor into these balls. I baked for 17 mins. I served with a marinara sauce. Again, these were good, just don't expect greatness.

Mexican Bean Salad

This was very tasty and got rave reviews. I made it as the recipe calls except I used bottled key lime and lemon juice. I found the dressing to be the right amount. I would make this again for sure and wouldn't change a thing. I thought this recipe was great and looked great, too, on the plate! Can serve this as a side with so many things. This is a keeper for sure.

Vegetarian Tortilla Stew

This was pretty good. I sauteed chopped onion and green pepper with garlic and salt and pepper in vegetable oil. Then added all of the other ingredients. I used chicken stock instead of water, and beef bouillon instead of vegetable bouillon. I did not add the cumin or cilantro just because I don't like those flavors. I had a can of mexican chili beans and corn. Then I chopped up a zucchini that I had. I did not add chicken. Served with shredded cheese on top. I love soup recipes that have a great base and are very easy to adapt to whatever ingredients you have on hand, and this is one of those. I will be making this again.

Oat Applesauce Muffins

I know these are intended to be healthy, so obviously they are not going to be super good, but these were not very good. I added 1 tsp of cinnamon, 1/2 tsp of nutmeg, and 1/2 cup of pecan pieces. If you are trying to eat really healthy and added some spices, etc. to this, these would be okay I suppose. They are just very dry and would have no flavor as written.

Zucchini Pie

I could tell from the simplicity of the recipe and from reading the other reviews that this was not going to have enough flavor for my liking. Here's what I did and it turned out really good: I diced two med zucchinis and half an onion. I sauteed them in a little olive oil with garlic, salt, pepper, and lemon pepper for a few mins. Then to the batter I added 1/2 tsp salt, 1/2 tsp black pepper, 1 tsp of garlic powder, and 1/2 tsp of oregano. Then once in the baking pan, I sprinkled additional Parmesan cheese on top and seasoned bread crumbs. Will serve with sprinkled, melted cheddar over the top. Tomatoes would have added nice color, but I didn't have any this time, will try adding that next time. I just used Jiffy baking mix as that's all I had.

Hot and Sour Slaw

This was really tasty! I used pre packaged shredded cabbage instead of bok choy. I thinly sliced red and yellow peppers and added the green onions. I used 1 tbsp less of cider vinegar, and added two shakes of hot sauce. I used sesame oil instead of vegetable oil. Delish, hot and tangy!

Red Pepper Biscuits

These are nice biscuits. They look very pretty. I put in 1 tsp of red pepper flakes, 1/2 tsp black pepper, 1/2 tsp oregano, 1/2 tsp salt, and 1 tsp garlic powder. Then I put a sprinkle of garlic powder in the melted butter as well that I brushed on before baking. And then I brushed them with plain melted butter after baking. I baked at 420 degrees for 12 mins.

Cucumber Sunomono

Zucchini Cornbread Casserole

This is very good. I added diced yellow pepper, a little diced pickled jalapenos, some cooked and diced bacon, and 1/2 tsp of garlic powder. I salted, drained and squeezed the zucchini. I used mexican shredded cheese (1/2 cheddar and 1/2 jack). Will definitely keep this recipe and continue tweaking until I get it just how I like it. This is a keeper, I think anyone would like this.

Green Hot Sauce (Salsa Verde)

I cut this recipe in half. My store did not have serranos, so I used 2 fresh jalapenos, removed the seeds and pith. I used less salt at the beginning, but then found after I blended the ingredients it was too acidic and added more salt to cut down the acid. I did not need any of the cooking liquid, I strained the ingredients before blending. It was not spicy enough for me, so I added about a tablespoon of pickled jalapenos and a splash of the juice from that jar and blended that. This was pretty good!

Oatmeal Peanut Butter Cookies

These are pretty good. I added an additional 1/2 cup of oats and 1 tsp of vanilla. I baked for 11 mins. I will definitely make these again. Chocolate chips would be really good in these.

Buttery Cinnamon Cake

Wow, this is tasty. I used 1 cup of white sugar and 1/3 cup of brown sugar, I used 1/3 cup of milk and 1/3 cup of applesauce, I upped the cinnamon to 1 tbsp, I used 1/2 tsp of salt, and I used butter instead of shortening. I did not glaze it and it was delicious as it was as we don't like things too sugary, but I'm sure a glaze would have made it even better for most people. I only needed to bake this for 35 mins. This is a keeper.

Favorite Old Fashioned Gingerbread

This cake is VERY moist. It has nice flavor, but it is not spicy, so I can see that doubling the spices would be a good idea on this one and I'll try that next time. Overall, very nice cake and could be very versatile with toppings/sauces, etc. Mine was done at 45 mins.

Thai Noodle Salad

This was okay, but I would want to tweak the sauce if I ever made this again. As it was, I cut the salt in half and even with that it was way too salty. I think the rice vinegar would need to be reduced as well. Bottom line, too salty and not spicy enough, but it was a nice texture and a nice crunch with the fresh veggies, just needs a tweak.

Spinach and Orzo Salad

This was pretty good. I used gorgonzola as I don't like feta. I think next time I will play with the dressing a little more because the balsamic was a little overpowering and overall the dressing was not very interesting. But a good base salad that you can work from.

Chicken Muffuletta with Spicy Olive Relish Mayonnaise

Only tried the mayo portion of this, and something was very off with that recipe. Came out way too thin, watery, tried to add more mayo but it would have taken too much and I didn't want to waste it. The flavor wasn't bad, just would need to tweak the ratio of vinegar to mayo.

Seminary Muffins

These were really good and certainly tasted "healthier" than a regular muffin. I did not add chocolate chips, I can see where these would be great with raisins, dried fruit, etc. I used pecan pieces instead of walnuts. These do not rise really at all, so fill your muffin tins accordingly. I will definitely make these again and try adding other things. These also were not very "spice"-ey, so I would probably add nutmeg, allspice, etc. next time to get a little more flavor going.

A Number One Egg Bread

This recipe itself has some issues. First off, there is no way this needs to bake for 40 mins. It probably was done after 20. And it was lacking in the sweetness of Hawaiian bread that I was looking for. Don't know if I would ever try this one again.

General Tsao's Chicken II

Wow! This sauce is really, really good. I did not have red chilis, so I used 1 tsp of red pepper flakes which produced moderate heat, could use more if you like. I also did not have peanut oil, so I used same quantity of crunchy peanut butter, the nuts ended up being a nice touch. This is a great sauce that I will use again for sure.
