Tomato Chicken Parmesan

Fantastic with my homemade sauce yet a couple adjustments. Pounded the chicken breasts to 1/2 inch thickness. Refrigerated breaded breasts for 30 min. though next time I will for an hour as some of the breading fell off during frying. Used provolone cheese which I added the final @8 min. of cooking. Served over linguine with extra sauce. Husband who is not an Italian food fan LOVED it. My only concern was the chicken meat itself though very tender needed more flavor. Next time I will use seasoning salt on chicken before breading. Definitely a keeper for the recipe box.

Country-Style Steak

LOVE this recipe. Would never make country style steaks any other way. Tender as heck & the gravy is heavenly over rice. Perfect every time.

Tomato Sauce

Used fresh tomatoes from our garden as well as fresh oregano, basil, and parsley. Also added minced garlic and a can of tomato paste to thicken it up. Since my husband loves a sweeter sauce I added a 1/3 cup of brown sugar. Let is simmer on very low for 2-3 hours. HUGE hit poured over fresh cheese ravioli. Definitely a keeper!

Peanut Butter Cake II

It was too fragile to handle the thick heavy frosting. Ended up using 1/2 c. whipping cream then milk & vanilla to thin the frosting so I could spread it on cake without breaking it. My daughter is a huge PB fan and didn't care for it at all. Wished the cake was more dense and the frosting more light. Won't make again.

Quinoa with Mushrooms

Some adjustment & it was great!! Used red quinoa which I cooked 20 min with only 2 1/2 c. chicken broth on medium. Added fresh pepper & garlic salt & 1/2 c. of fresh parmesan & 1/4 c. of fresh cilantro. Everything else was as recipe. LIKED so much!!

Slow Cooker Enchiladas

After reading reviews I made a couple of adjustments. Used 1 pound beef & used Fajita seasoning. Added some fresh banana peppers to the beef once is was browned. Added a can of drained black beans to the cheese soup mixture. Also used only half the cheese suggested. In hindsight would maybe use more beef & more corn tortillas. Cooked for 1 1/2 hours. Family LOVED it!

Octoberfest German Potato Salad

Beer Lime Grilled Chicken

Excellent base recipe for marinating fresh chicken breasts. Used a quality light colored hoppy beer. Garlic salt instead of regular salt, minced sweet banana pepper from the garden, and doubled the cilantro & honey. Totally left out the garlic & marinated for over an hour turning the bag several times. Grilled slowly over medium heat while basting the chicken often with the marinade. Liked the flavor of this extremely moist chicken. Definitely a keeper & easy to modify based on what you have in the garden/kitchen.

Strawberry Cake II

Substituted yellow cake mix used frozen fresh strawberries from our garden last summer. The intensity of the strawberry flavor was incredible. For frosting I used 1 stick butter 4 c.powdered sugar, 1/2 t vanilla with the rest of the defrosted strawberries.

Ugly Duckling Cake I

Made without nuts and no sugar added fruit cocktail. Added a little white chocolate to the frosting/glaze & made it a bit thicker using corn starch. BOOM!!!

Colorful Garlic Orzo

Used all veggies as recipe called but unfortunately cut the garlic in half. Found it better with added garlic salt. Will learn next time to keep garlic as indicated or even more. Didn't have cherry tomatoes so used 2 whole tomatoes cut up. Also added 1 tablespoon of chopped fresh cilantro, white pepper, & a bit of italian seasoning. Made a huge skillet full so looking forward to leftovers.

Irish Soda Bread

Best Irish soda bread ever and I have made many. Used 1 c. of cranberries, 1/2 cup raisins,& 1 1/2 c. golden raisins. Used my trusty cast iron skillet. Baked 65 min. Wonderful for breakfast.

Orange Slice Cake

Modified this recipe by using 1 cup of chopped dates & 1 1/2 cups of chopped mixed pecans/walnuts. Also used margarine instead of butter. Baked in bundt pan for close to 3 hours at 250. Removed cake from pan and poured powdered sugar/orange juice on while still hot spooning reserve over the top. PERFECTION!!

Pumpkin Turkey Chili

My family really enjoyed this chili. Did add 1 c. of frozen corn, extra tablespoon of chili powder, 1 can of light kidney beans, & 1/2 c. of packed brown sugar. It was kick!!

Scallop Scampi

Sadly disappointed but will play with this recipe in the future.with better quality bay scallops. Used frozen bay scallops which were entirely too small and fishy. Followed recipe and found the sauce to be soupy & thin so used corn starch to thicken. Also used fresh parsley & parmesean. Willing to try again with adjustments.

LOVED this recipe. Did modify by removing the skin off the thighs, use minced garlic, doubleld the soy sauce, added a tsp. powedered ginger, and a tsp of white pepper. Cook time was less than an hour.

Country-Style Ribs

LOVE this recipe! Did not use cloves (spouse does not like 'em) or the celery salt. The ribs were ultra tender, very buttery tasting. Sauce was delicious over potatoes. Definitely a family favorite.
