Sam's Famous Carrot Cake

Wow! I'm thrilled. This cake turnout delicious and moist. Not being a baker a cake like carrot cake always seemed daunting but this turned out great, thank you Brian. I did make some of the suggested changes, ie, 1 cup white and 1/2 cup brown sugar, boiled the raisins in oj (yum) and used almond milk with a tsp of lemon in place of buttermilk (lactose intolerant). I will eat this cake without frosting, I frosted half for hubby. Even after all the work I will be making this again, soon!

Old-Fashioned Pancakes

I was disappointed with this recipe. Batter was overly thick, I had to add more milk. The flavor was good, but I did enhance with cinnamon and vanilla. Will not make again.

Classic Bran Muffins

Just tried and am thrilled with this recipe. Previous bran muffins I've made have always been dry, these were moist! I did substitute the oil with home-made applesauce and added cinnamon and used bran flakes instead of regular bran. I also, used soy milk (can't have dairy) with 1 tbsp lemon juice instead of buttermilk. Thank you for this recipe.

Mock Cherry Pie

This recipe turned out great, very similar to the one I had years ago. I added 1/2 cup of walnuts per request of my husband. I tried it with vanilla and then again with almond extract and lemon juice as one review suggested and I like the almond extract with lemon juice better. Thanks so much for this recipe it is a big hit!

Asparagus Parmesan

Excellent everyone enjoyed it! I roasted the asparagus with EVOO, salt, pepper, and garlic powder then added the parm after removing from oven. Served it last night at a dinner party and it was a huge hit. Thanks!
