White Chili I

This was so easy and quick to make! I did make a few changes though: it was a little bland, so I added a few more dashes of each spice, used fresh cilantro, 2 cans of great northern beans, and added a bit of flour to thicken. Simmered 5-10 minutes longer than recipe stated. The grocery store didn't have monterey jack cheese, so we used colby jack instead. Served with cornbread. My husband said, 'mmmmmm,' after every bite. Next time, I'll make a double batch so there are more leftovers! Thanks for a fabulous recipe!

Six Can Chicken Tortilla Soup

Great & soooo easy to make. I used 3 fresh chicken breasts sliced into thin strips & cooked for a few minutes in a bit of olive oil with 1 clove of garlic. Then added the cans, along with 1 can of diced green chiles & 1 can of cream of ckn in place of 1 ckn broth. Sprinkled on some cayenne pepper, 1 tsp. of cumin, and a few dashes of hot sauce. Served with tortilla chips for dipping and shredded monterey jack cheese. Delicious.

White Chocolate Snack Mix

I love this! I've been making a similar recipe for a few years, but mine uses more cereal & 2 bags of white chips. Makes a gigantic amount--almost 2 gallon ziploc bagfuls. Once you start munching, you'll have to have someone pull you away. Very, very addicting stuff.

Granny Kat's Pumpkin Roll

I know it's almost spring, but I just had a huge craving for this. I like to dust it with some 10x sugar before serving. And whenever I make these, I have some leftover filling. I just keep it in a little sealed container & use it to slather on each slice. I can feel my thighs expanding...

Rich Chocolate Chip Toffee Bars

These are my new favorite cookies! Do you have any idea how hard it is to not gobble these down until you get sick? I had to bag a few for myself & keep them hidden so the cookie monster wouldn't get them (my husband). Would make a great gift.

Pizza Pasta

This was great & my husband loved it! But...I did make changes (what a shock!). I used pizza sauce for the spaghetti sauce, sausage for the hamburger, added some sliced black olives, sliced fresh mushrooms, and some chopped green pepper. Yummy and very easy.

Janine's Best Banana Bread

Much better the next day. So very easy to make too--took no time at all. I added a cup of mini chocolate chips. Did have to turn the temp down to 325 after the first 30 min, then baked an additional 6 minutes so it was completely done. Great texture & taste. Oh, and the banana taste isn't overpoweringly strong like other recipes.

Buffalo Style Chicken Pizza

This really didn't look appetizing. As I was cutting it, I was thinking, why did I make this? Even during my first few small bites, I wasn't sure, but the more you eat, the more you like it. We think it tastes like Domino's chicken kickers on a crust. I used a Boboli crust, about 3/4 cup peppercorn ranch dressing, 2 oz. of hot sauce, 2 small pinches of crushed red pepper, reduced fat mozzarella, and topped with sliced mushrooms. I did finely cube & shred the chicken. Baked for 12 minutes to get a slightly crisper crust. We couldn't eat a lot because it's spicy and rich.

Rice with Black Beans

I'm sick today & wanted to make something easy for lunch, and this fit the bill. It tasted a little bland, so I added some dashes of hot sauce and a sprinkle of cayenne. This is so very good. I know I'll be making it again. Would make great burritos.

Creamy Orange Cake

This was the hit of our Memorial Day cookout. Light, cool, and creamy, it's perfect. And it's not really that sweet. I think I'll try cupcakes the next time too. (And the orange cake mix IS hard to find. If you have Meijer grocery stores, they're the only ones that sell the DH orange cake mix around here.)

Grilled Turkey Club

This is very good, but I think I like our 'recipe' better: Toast the bread instead of cooking it in a skillet. Spread 1 piecee of toast with mayo, add 1 slice cheese, lettuce, 1 slice of tomato, 1 slice bacon torn in half, turkey, then a 2nd piece of bacon torn in half, another slice of tomato, and your second piece of toast with mayo. Add a side of chips, preferably barbecue, a dill pickle spear, and you'll be in heaven.

Salmon with Dill

I know I've rated other salmon recipes 5 stars, but this is one of THE best. I didn't change a thing, and my husband loved it! He kept saying, I love this, I love this... I did have to cook a few minutes longer because my fillets were a little thick. Great with steamed baby carrots and roasted new red potatoes.

Chicken Pasta I

Very simple and delicious. I too used olive oil to grease my pan. I did add 1 clove of garlic to the chicken while it was cooking. Next time, I may use 2. I also used 2 cans of diced tomatoes, more mushrooms, and some matchstick slivers of squash and zucchini. I think that 2 tbsp of Italian seasoning was too much, and when I make this again, I will use 2 cans of tomatoes with Italian seasoning instead.

Key Lime Cake II

Easy to make & delicious. This was a really nice, refreshing dessert for our blazing hot 4th of July cookout. I didn't halve the glaze recipe. I had a little bit leftover, but not tons. And the glaze really adds to the overall flavor so be generous with it.

Honey Mustard Dressing II

I made this in hopes of making a salmon salad similar to the wonderful one they offer at Lone Star & Long Horn restaurants. I love their dressing, and this is very close. Be sure to use a good dijon mustard--this is a great recipe. If you need more than a few servings, make sure to at least double or triple this. You can use fat free mayo too!!!

Downeast Maine Pumpkin Bread

I was looking for a pumpkin bread recipe last evening, and I came across this one. Since I had everything on hand, I tried it out. Yum!! This has got to be one of the best pumpkin breads I've had. The only change I made was to throw in some white chocolate chips. I can't wait to make these for Christmas gifts, and I'm definitely going to try some other add-ins to it...nuts, different chips, craisins... mmmm

E-Z Drop Biscuits

These are so fast and easy to make. They're very good; I think my husband ate 4 of them. I served them over a creamed chicken gravy with vegetables. It made a delicious one dish meal!
