Alyson's Broccoli Salad

I used cider vinegar, fat free mayo, golden raisins, turkey bacon, and peanuts in this. Absolutely delish! Tastes just like a local cafe's wonderful recipe. Thanks Eleanor!

Fantastic Black Bean Chili

I didn't feel this had enough beans in, so I added an extra can. Also added 1 extra can of tomatoes, 1 small can of chopped green chiles, 1 tsp cumin, and a generous sprinkle of cayenne pepper. Left out the vinegar. Served with cornbread and shredded cheese. This is a fabulous, fast, and easy meal. Froze half of it to use later.

Six Can Chicken Tortilla Soup

Great & soooo easy to make. I used 3 fresh chicken breasts sliced into thin strips & cooked for a few minutes in a bit of olive oil with 1 clove of garlic. Then added the cans, along with 1 can of diced green chiles & 1 can of cream of ckn in place of 1 ckn broth. Sprinkled on some cayenne pepper, 1 tsp. of cumin, and a few dashes of hot sauce. Served with tortilla chips for dipping and shredded monterey jack cheese. Delicious.

Grandma's Five Cup Salad

This reminds me so much of my Grandma and sleeping over at her house with my cousin. She always had these ingredients on hand for us because it's so easy for anyone to make. The only difference is that our recipe calls for 1 cup or 8 oz of each: 1 cup marshmallows, 1 cup coconut, 8 oz sour cream, 8 oz mandarin oranges, 8 oz crushed pineapple. Of course, I think the oranges & pineapple may just come in 11 oz cans, but we never cared since we both love pineapple & oranges.

Creamy Orange Cake

This was the hit of our Memorial Day cookout. Light, cool, and creamy, it's perfect. And it's not really that sweet. I think I'll try cupcakes the next time too. (And the orange cake mix IS hard to find. If you have Meijer grocery stores, they're the only ones that sell the DH orange cake mix around here.)

Grilled Turkey Club

This is very good, but I think I like our 'recipe' better: Toast the bread instead of cooking it in a skillet. Spread 1 piecee of toast with mayo, add 1 slice cheese, lettuce, 1 slice of tomato, 1 slice bacon torn in half, turkey, then a 2nd piece of bacon torn in half, another slice of tomato, and your second piece of toast with mayo. Add a side of chips, preferably barbecue, a dill pickle spear, and you'll be in heaven.

Salmon with Dill

I know I've rated other salmon recipes 5 stars, but this is one of THE best. I didn't change a thing, and my husband loved it! He kept saying, I love this, I love this... I did have to cook a few minutes longer because my fillets were a little thick. Great with steamed baby carrots and roasted new red potatoes.

Sauteed Apples

Made this yesterday morning for breakfast with pancakes. Added 1 tsp. vanilla and increased cinnamon to 1 tsp. Delicious! Reminds me of the fried apples at Cracker Barrel.

Cheese Ball I

I don't like cheese, but I halved this recipe for my husband's office party. He came back with an empty platter and said everyone loved it. This is a very quick & easy recipe. I used 1/3 less fat block of cream cheese and only about 2/3 cup of chopped pecans -- it didn't need the entire cup.

Double Chocolate Mocha Trifle

Didn't change a thing. Fabulous but rich. Definitely have some milk or water to go with it. Next time, I might chop up some extra heath candy bars for the bottom and middle layers though. Will be making this one again.

Baked Teriyaki Chicken

Absolutely wonderful! The recipe didn't mention it, but I decided to cover the pan with foil to help keep the chicken tender. And I used lite soy sauce too. I think I may decided to line the pan with foil too the next time I make it--otherwise, you have a sticky, black mess. Delicious flavor, and the chicken was so tender. Will definitely make again.

Southwest Chicken

I'm rating this 5 stars because the corn & bean mixture was great--that is, after I spiced it up a bit. Added a 4 oz can diced chiles, a bit more cumin, 3 cloves of garlic, chili powder, & some chopped onions. I tried to spice up the chicken, but it was still a little blah. Next time, I think I'll make margarita grilled chicken & serve with the beans & corn mixture from this recipe as a side dish.

Buffalo Style Chicken Pizza

This really didn't look appetizing. As I was cutting it, I was thinking, why did I make this? Even during my first few small bites, I wasn't sure, but the more you eat, the more you like it. We think it tastes like Domino's chicken kickers on a crust. I used a Boboli crust, about 3/4 cup peppercorn ranch dressing, 2 oz. of hot sauce, 2 small pinches of crushed red pepper, reduced fat mozzarella, and topped with sliced mushrooms. I did finely cube & shred the chicken. Baked for 12 minutes to get a slightly crisper crust. We couldn't eat a lot because it's spicy and rich.

Lime Chicken Soft Tacos

I would have liked to marinate the chicken in the lime mixture, but I didn't have enough time. As it was, I ended up adding using the whole lime & some cayenne pepper to give it more flavor. Next time, I will definitely marinate the chicken for a few hours. And I didn't cube it, I sliced it into thin strips. Served with the Black Beans with Rice recipe from this site, tortilla chips with salsa, and some lime flavored Tostitoes for myself. If you can't tell, I love lime. A good and easy recipe. But again, marinate if you're expecting it to have a stronger lime flavor.

Chicken Pasta I

Very simple and delicious. I too used olive oil to grease my pan. I did add 1 clove of garlic to the chicken while it was cooking. Next time, I may use 2. I also used 2 cans of diced tomatoes, more mushrooms, and some matchstick slivers of squash and zucchini. I think that 2 tbsp of Italian seasoning was too much, and when I make this again, I will use 2 cans of tomatoes with Italian seasoning instead.

Rich Chocolate Chip Toffee Bars

These are my new favorite cookies! Do you have any idea how hard it is to not gobble these down until you get sick? I had to bag a few for myself & keep them hidden so the cookie monster wouldn't get them (my husband). Would make a great gift.
