Alyson's Broccoli Salad

I used cider vinegar, fat free mayo, golden raisins, turkey bacon, and peanuts in this. Absolutely delish! Tastes just like a local cafe's wonderful recipe. Thanks Eleanor!

Best Brownies

After reading so many wonderful reviews, I had to try these. These are soooooooo good. I did have to add a bit of milk to the frosting to thin it out, but that's all I had to change. I think we ate the whole pan in 2 days. And these are definitely better the first day. But you can warm them up in the microwave and add a scoop of vanilla ice cream - heavenly! Thanks for a delicious recipe that I'll be making again and again!

Vanilla - Chocolate Powdered Sugar Frosting

I needed a frosting recipe for cookies I was making. My friend had neglected to give me her frosting recipe with the cookies, so I needed something delicious and easy. It's so good, I had a hard time not licking the spoon as I frosted. Absolutely delicious! Will use this recipe from now on.

Holiday Peppermint Bark

So easy to make & absolutely delicious! Everyone asked for the recipe. Instead of 24 peppermint candies, I used 6 red, white, and green striped candy canes. I found that crushing them very finely makes it taste more pepperminty; some recipes call for peppermint oil, but this doesn't need it. I did push bigger pieces into the top. You may want to make a double batch if taking to a party.

Chili Chicken Stew

Baked Salmon Fillets Dijon

This was ok. I did have to bake it about 30-35 minutes, and there was too much melted butter. 2-3 tbsp should be enough, unless you love lots. I'll try the baked dijon salmon recipe next time.

Chicken Breasts Pierre

Wonderful! My husband told me it was just like a 'fancy' restaurant dish. Served it over angel hair pasta and with homemade rolls. Will definitely make again, but I will add mushrooms and skip the salt. I also added a bit more pepper to the flour mixture and more water to tomato mixture when it was done.

Basil Chicken over Angel Hair

I agree with the last rating - not nearly as special/great as the reviews make it sound. I thought it was very, very bland. I may make it again and use a large can of Italian stewed tomatoes and add fresh mushrooms. I haven't decided what spices it needs, but it needs something.

Paprika Chicken with Mushrooms

I served this over angel hair pasta which I very lightly buttered. The mushrooms were so good! But I did sprinkle some onion powder in with them so they wouldn't taste as buttery. I liberally sprinkled the chicken with the spices, so no problem with blandness. Used extra mushrooms too. Served with hot, crispy whole wheat rolls.

Cooking Light magazine's Chicken Parmesan

Very easy and quick. I followed someone else's suggestion to pour the sauce in & put the chicken on top. Didn't get very soggy at all. Served over rotelle pasta and with croissants. Yummy!

Chicken Scampi II

Absolutely delicious! My husband said it was like eating at Bravo's or Olive Garden. I did end up using all the butter & olive oil because I tossed it with angel hair pasta. Also added 2x the amount of garlic & lemon and even added more lemon juice and some garlic powder after I tossed with pasta - it lost some of the flavor. Cut up a red bell pepper & a head of fresh broccoli & added right before I let it simmer for 15 min. Served with flaky croissants.

Caramelized Baked Chicken

I taste tested the sauce before baking & it definitely needed the hot sauce others have recommended. I just sprinkled some in until I liked the flavor. NEVER CARAMELIZED THOUGH. I let the chicken bake for 45 minutes & broiled for a few, but it just didn't work. I also let it stand for a few minutes like someone else said-no luck & chicken got tough. Great flavor though.

Veggie Chicken Rice Casserole

Recipe didn't mention anything about cooking the chicken. I cooked mine and then added to casserole. Makes a huge amount. Good and simple but needs more flavor - definitely salt and pepper at least.

Chicken and Mushroom Saute

So yummy and easy to make! I used light olive oil in place of the vegetable oil and omitted the butter. Substituted chicken broth for the water and bouillon granules & used 12 oz. fresh mushrooms, sliced, instead of canned. Tossed with spiral pasta. Delicious!

Asian Roll Lettuce Wrap

Chicken, Sausage and Zucchini Pasta

Since we don't like Italian sausage, I used country sausage instead. Also used fresh, sliced mushrooms in place of canned and only 1 zucchini instead of 3. Used about 2 1/4 cups of sauce and sprinkled in some oregano. I thought it needed a little more flavor. Very good!

Chicken With Mushrooms

Very good recipe & easy to make. I tried crimini mushrooms with this and used more than called for. I served it with rice as suggested, but I wasn't impressed. Next time, I'll try it with egg noodles & add something to thicken the broth. I think it'll be better with a more gravy-like consistency.
