Groovie Smoothie

Reviewed: Mar. 9, 2003
This is better with only 1 banana, fresh strawberries, vanilla soy milk, and some crushed ice. Makes a great quick breakfast!

Grandma's Five Cup Salad

Reviewed: Mar. 4, 2003
This reminds me so much of my Grandma and sleeping over at her house with my cousin. She always had these ingredients on hand for us because it's so easy for anyone to make. The only difference is that our recipe calls for 1 cup or 8 oz of each: 1 cup marshmallows, 1 cup coconut, 8 oz sour cream, 8 oz mandarin oranges, 8 oz crushed pineapple. Of course, I think the oranges & pineapple may just come in 11 oz cans, but we never cared since we both love pineapple & oranges.

Buttery Cooked Carrots

Reviewed: Mar. 3, 2003
I steamed the carrots instead of boiling them to keep more of the flavor and nutrients. I don't like my vegetables really sweet, so I used about 1 1/2 tbsp butter and 3 tbsp brown sugar. It was just enough to make them slightly sweet without hiding the natural good flavor.

Six Can Chicken Tortilla Soup

Reviewed: Feb. 27, 2003
Great & soooo easy to make. I used 3 fresh chicken breasts sliced into thin strips & cooked for a few minutes in a bit of olive oil with 1 clove of garlic. Then added the cans, along with 1 can of diced green chiles & 1 can of cream of ckn in place of 1 ckn broth. Sprinkled on some cayenne pepper, 1 tsp. of cumin, and a few dashes of hot sauce. Served with tortilla chips for dipping and shredded monterey jack cheese. Delicious.

Butter Frosting

Reviewed: Feb. 23, 2003
I used this for an orange cake, and it was wonderful! I did have to add a little more milk because it's very thick, and I also added about an extra 1/4 tsp vanilla. Very easy to make.

BBQ Chicken Pizza

Reviewed: Feb. 17, 2003
I'd give this a 4 1/2 if I could but as it is, I'll have to give it a 4. Used half a white onion instead of a red one, left off the peppers, used mozzarella cheese, and added sliced mushrooms--all on a Boboli crust. Very good, but not fantastic. Will probably make again.

Fantastic Black Bean Chili

Reviewed: Feb. 14, 2003
I didn't feel this had enough beans in, so I added an extra can. Also added 1 extra can of tomatoes, 1 small can of chopped green chiles, 1 tsp cumin, and a generous sprinkle of cayenne pepper. Left out the vinegar. Served with cornbread and shredded cheese. This is a fabulous, fast, and easy meal. Froze half of it to use later.

Awesome Slow Cooker Pot Roast

Reviewed: Feb. 3, 2003
Used a 2 1/2 lb. angus beef roast. Took others' advice & used 3 cans of cream soups, added oregano, 3 garlic cloves, marjoram, and onion powder. Added potatoes, celery, baby carrots, mushrooms, and celery. Next time, I think I'll only use 2 cans of soup because it made an immense amount of gravy. Also, I think I'll leave out the potatoes and make mashed potatoes instead. Make sure to leave plenty of time for this to get done--because of all the liquid, it took 12 hrs for my little roast to get done.

Beefy Lentil Vegetable Soup

Reviewed: Jan. 30, 2003
A great & easy recipe. I did take another reviewer's advice & added a bit more flavor by adding cayenne pepper, garlic powder, and onion powder. Thought it still needed more & added a few dashes of hot sauce. I used about 8 oz. fresh mushrooms instead of canned & 1/2 ground beef & 1/2 ground turkey.

Best Spinach Dip Ever

Reviewed: Dec. 13, 2002
Absolutely wonderful! And I'm not a big fan of sour cream or mayonnaise, but this is great! I just couldn't find leek soup mix, so I used a packet of Knorr's veg. mix & added about 1/3 of an onion soup mix packet. Used the whole box of spinach & served with pumpernickel.

Baked Teriyaki Chicken

Reviewed: Nov. 22, 2002
Absolutely wonderful! The recipe didn't mention it, but I decided to cover the pan with foil to help keep the chicken tender. And I used lite soy sauce too. I think I may decided to line the pan with foil too the next time I make it--otherwise, you have a sticky, black mess. Delicious flavor, and the chicken was so tender. Will definitely make again.

Stromboli

Reviewed: Nov. 20, 2002
Delicious. Next time I'll try making my own dough. I did make my own pizza sauce, which included using green pepper, sliced mushrooms, and an onion, so I didn't follow this recipe exactly. For filling: used some extra sliced mushrooms, not canned, 1/2 lb. sausage, cut into small chunks, 1 cup ground turkey, only 3 oz pepperoni (gets too greasy), and some broccoli. When the sausage was almost browned, I threw in the sliced mushrooms and broccoli to soften them a bit. I also brushed olive oil on the top instead of butter.

Kung Pao Chicken

Reviewed: Nov. 14, 2002
I didn't have chile paste, so I threw in some red pepper. I tripled the sauce recipe because I added baby corn, green bell pepper, and thinly sliced carrots and it wouldn't have been enough once I added the chicken. The sauce got really thick though & had to add some water to thin it down a bit. You may have to adjust this one to your own taste. It's good, but I needed to play around with it.

Anthony's Chicken

Reviewed: Nov. 12, 2002
I don't know why someone said this is quick to prepare because it took at least 50 minutes. I did use 3 tsp mustard instead of 3 tbsp, but it still seemed strong. Reserved some of the sauce to put over the chicken & then topped with cheese. This is good, but it's a rather rich meal. Probably won't make again.

White Chili I

Reviewed: Oct. 31, 2002
This was so easy and quick to make! I did make a few changes though: it was a little bland, so I added a few more dashes of each spice, used fresh cilantro, 2 cans of great northern beans, and added a bit of flour to thicken. Simmered 5-10 minutes longer than recipe stated. The grocery store didn't have monterey jack cheese, so we used colby jack instead. Served with cornbread. My husband said, 'mmmmmm,' after every bite. Next time, I'll make a double batch so there are more leftovers! Thanks for a fabulous recipe!

No Bake Peanut Butter Pie

Reviewed: Oct. 16, 2002
This is just like the recipe my grandma made for us when I was little. I made my own graham cracker crusts, which make it so much better. Very rich though, so don't eat a big piece.

Chicken With Mushrooms

Reviewed: Oct. 11, 2002
Very good recipe & easy to make. I tried crimini mushrooms with this and used more than called for. I served it with rice as suggested, but I wasn't impressed. Next time, I'll try it with egg noodles & add something to thicken the broth. I think it'll be better with a more gravy-like consistency.

Chicken, Sausage and Zucchini Pasta

Reviewed: Aug. 12, 2002
Since we don't like Italian sausage, I used country sausage instead. Also used fresh, sliced mushrooms in place of canned and only 1 zucchini instead of 3. Used about 2 1/4 cups of sauce and sprinkled in some oregano. I thought it needed a little more flavor. Very good!

Asian Roll Lettuce Wrap

Reviewed: Aug. 12, 2002
After reading other reviews mentioning the turkey was dry, I decided to use half ground turkey and half ground beef. Turned out flavorful and moist. This was a nice change for a meal.
