Key Lime Cake II

Easy to make & delicious. This was a really nice, refreshing dessert for our blazing hot 4th of July cookout. I didn't halve the glaze recipe. I had a little bit leftover, but not tons. And the glaze really adds to the overall flavor so be generous with it.

Chicken Pasta I

Very simple and delicious. I too used olive oil to grease my pan. I did add 1 clove of garlic to the chicken while it was cooking. Next time, I may use 2. I also used 2 cans of diced tomatoes, more mushrooms, and some matchstick slivers of squash and zucchini. I think that 2 tbsp of Italian seasoning was too much, and when I make this again, I will use 2 cans of tomatoes with Italian seasoning instead.

Salmon with Dill

I know I've rated other salmon recipes 5 stars, but this is one of THE best. I didn't change a thing, and my husband loved it! He kept saying, I love this, I love this... I did have to cook a few minutes longer because my fillets were a little thick. Great with steamed baby carrots and roasted new red potatoes.

Grilled Turkey Club

This is very good, but I think I like our 'recipe' better: Toast the bread instead of cooking it in a skillet. Spread 1 piecee of toast with mayo, add 1 slice cheese, lettuce, 1 slice of tomato, 1 slice bacon torn in half, turkey, then a 2nd piece of bacon torn in half, another slice of tomato, and your second piece of toast with mayo. Add a side of chips, preferably barbecue, a dill pickle spear, and you'll be in heaven.

Creamy Orange Cake

This was the hit of our Memorial Day cookout. Light, cool, and creamy, it's perfect. And it's not really that sweet. I think I'll try cupcakes the next time too. (And the orange cake mix IS hard to find. If you have Meijer grocery stores, they're the only ones that sell the DH orange cake mix around here.)

Chicken Piccata II

Definitely need to double the amount of coating mixture, or you won't have enough. Capers would be good with this. I added fresh, sliced mushrooms & liked their taste better than the chicken. Pounded the chicken thinly and added 1 tbsp lemon juice to the broth. Dissolved a bouillon cube in a cup of water & used some of that since a few people mentioned it was too salty. Good & fairly easy recipe, but the amount of butter is more than I'm used to & left my stomach upset for the rest of the evening, even though I didn't have much.

Lime Chicken Soft Tacos

I would have liked to marinate the chicken in the lime mixture, but I didn't have enough time. As it was, I ended up adding using the whole lime & some cayenne pepper to give it more flavor. Next time, I will definitely marinate the chicken for a few hours. And I didn't cube it, I sliced it into thin strips. Served with the Black Beans with Rice recipe from this site, tortilla chips with salsa, and some lime flavored Tostitoes for myself. If you can't tell, I love lime. A good and easy recipe. But again, marinate if you're expecting it to have a stronger lime flavor.

Lemon Pudding Cake I

Fairly easy to make, but the pudding was rather runny. I didn't care for it warm; the cake part was too light & foamy textured. I think it's better cold with a scoop of vanilla ice cream. Did remind me of lemon meringue pie though. Thanks Cali.

Rice with Black Beans

I'm sick today & wanted to make something easy for lunch, and this fit the bill. It tasted a little bland, so I added some dashes of hot sauce and a sprinkle of cayenne. This is so very good. I know I'll be making it again. Would make great burritos.

Buffalo Style Chicken Pizza

This really didn't look appetizing. As I was cutting it, I was thinking, why did I make this? Even during my first few small bites, I wasn't sure, but the more you eat, the more you like it. We think it tastes like Domino's chicken kickers on a crust. I used a Boboli crust, about 3/4 cup peppercorn ranch dressing, 2 oz. of hot sauce, 2 small pinches of crushed red pepper, reduced fat mozzarella, and topped with sliced mushrooms. I did finely cube & shred the chicken. Baked for 12 minutes to get a slightly crisper crust. We couldn't eat a lot because it's spicy and rich.

Janine's Best Banana Bread

Much better the next day. So very easy to make too--took no time at all. I added a cup of mini chocolate chips. Did have to turn the temp down to 325 after the first 30 min, then baked an additional 6 minutes so it was completely done. Great texture & taste. Oh, and the banana taste isn't overpoweringly strong like other recipes.

Dump Cake I

Dump cake doesn't sound good, but it is! It took me like 5 minutes to put together, and it was so yummy! I let it sit for about 30 minutes before we tried it, and it was great. Reminded me of a fruit crisp. It's good cold, but I like it best warm with some vanilla ice cream.

Pizza Pasta

This was great & my husband loved it! But...I did make changes (what a shock!). I used pizza sauce for the spaghetti sauce, sausage for the hamburger, added some sliced black olives, sliced fresh mushrooms, and some chopped green pepper. Yummy and very easy.

Oven Fries

These were pretty good. After seeing other reviews mentioning burning, I set my oven at 425 instead of 450. Used olive oil instead of veg. oil and added a bit more cayenne & some garlic salt. Pretty tasty. Thanks for the recipe!

Rich Chocolate Chip Toffee Bars

These are my new favorite cookies! Do you have any idea how hard it is to not gobble these down until you get sick? I had to bag a few for myself & keep them hidden so the cookie monster wouldn't get them (my husband). Would make a great gift.

I know it's almost spring, but I just had a huge craving for this. I like to dust it with some 10x sugar before serving. And whenever I make these, I have some leftover filling. I just keep it in a little sealed container & use it to slather on each slice. I can feel my thighs expanding...

White Chocolate Snack Mix

I love this! I've been making a similar recipe for a few years, but mine uses more cereal & 2 bags of white chips. Makes a gigantic amount--almost 2 gallon ziploc bagfuls. Once you start munching, you'll have to have someone pull you away. Very, very addicting stuff.

Spanish Rice II

Subbed ckn broth for the water, but I'm wondering if I should have. It got a little too salty so I had to do the 'boil the potato' thing to help out. Make sure to use low-sodium broth. Also, I had to suck out a good bit of liquid because it wasn't all absorbed. Added some diced chiles, cumin, crushed red pepper, and some extra chili powder to give it more flavor. Made a lot more rice than my husband & I could eat. If I make this again, I'm cutting the recipe in half.

Southwest Chicken

I'm rating this 5 stars because the corn & bean mixture was great--that is, after I spiced it up a bit. Added a 4 oz can diced chiles, a bit more cumin, 3 cloves of garlic, chili powder, & some chopped onions. I tried to spice up the chicken, but it was still a little blah. Next time, I think I'll make margarita grilled chicken & serve with the beans & corn mixture from this recipe as a side dish.
