Grilled Chicken with Rosemary and Bacon

This was absolutely delicious! We used regular bacon instead of thick cut because that's what we had (3 halves per breast), and it was perfect. We cut a slit in each chicken breast to put the rosemary in so it would be better secured, and it worked great.

Bacon Wrapped Pork Medallions

This was easy, fabulous and so delicious! My boyfriend and I loved it, and I will be making this again. No changes needed to the recipe. Perhaps the people who said it took longer to cook cut their medallions thicker? I cut mine as wide as the bacon slices, and they cooked perfectly in about 17-18 minutes. The only issue I had was that I needed to make another batch of the herb mix because I ran out and had to remake mid-dipping.

Pepper Steak Packet

I'm sure this was delicious as listed, but these are the changes I made based on my feelings about the quantities when assembling the packet. I love steak, so I upped the amount to 1 lb. I used a red and green pepper only, and I cut them into small chunks. Used 1/2 an onion since mine was huge. Did not add zucchini, and only 1/2 the cherry tomatoes. For steak sauce, I used Heinz 57 sauce, and I sprinkled it all with salt and pepper. Then I baked the packet in the oven at 425 as suggested for about 45-50 minutes.

Sweet and Tangy Slow Cooker Bar-B-Q Pork

The only thing I changed was that I used ground red chile paste instead of chili sauce because that's what I had. It gave it a nice, spicy heat. These were done in 7 hours. Delish! Definitely adding this recipe to my keepers!

Downeast Maine Pumpkin Bread

I was looking for a pumpkin bread recipe last evening, and I came across this one. Since I had everything on hand, I tried it out. Yum!! This has got to be one of the best pumpkin breads I've had. The only change I made was to throw in some white chocolate chips. I can't wait to make these for Christmas gifts, and I'm definitely going to try some other add-ins to it...nuts, different chips, craisins... mmmm

E-Z Drop Biscuits

These are so fast and easy to make. They're very good; I think my husband ate 4 of them. I served them over a creamed chicken gravy with vegetables. It made a delicious one dish meal!

Glazed English Toffee Cake

You've got to try this one; it'll really impress everyone. Relatively easy to make, and it's so yummy! The dutch process cocoa makes the cake gives the cake a really wonderful chocolate flavor--be sure not to use anything else. Next time I make this, I think I'll try making my own whipped cream instead of cool whip, not that it detracted from the flavor at all.

Garlic Croutons

I'm rating this five stars, but only if you make this change: Instead of using a clove of garlic, use garlic salt and Italian seasoning. I tried it first using the clove, but it burns easily and tastes bitter. When olive oil is warm but not hot, sprinkle in garlic salt and Italian seasoning to taste. Try on the tip of your finger; add more if necessary. Then follow the the instructions for mixing and baking. The croutons are much better this way!

Double Chocolate Mocha Trifle

Didn't change a thing. Fabulous but rich. Definitely have some milk or water to go with it. Next time, I might chop up some extra heath candy bars for the bottom and middle layers though. Will be making this one again.

Peanut Butter Frosting

You cannot make this recipe as it is! It's horrible; tastes like butter. Definitely halve the butter if you try this recipe. I even used about 1 1/2 cups peanut butter trying to make this taste better. I only made this because my usual recipe calls for crisco, and I didn't have any. What an absolute waste of good ingredients. Deleting this from my recipe box immediately!

Hobo Dinner

I am only rating this a 5 because of the changes I made as per other people. I wanted to use onion soup mix in the hamburger, but I didn't have any. So I settled for mixing in Worcestershire sauce, some onion powder, fresh ground pepper, garlic powder, and season salt. Other changes: Used a yellow onion, baby carrots, and added 3-4 cloves of fresh minced garlic. Then I gently poured a cup of beef broth over all and sprinkled with fresh ground pepper and coarse salt. This got very good and flavorful, and the meat was nice and moist from the broth.

Chicken Breasts with Herb Basting Sauce

Absolutely delicious! I did double the marinade, added 1/4 cup melted butter, 3 large quartered potatoes, and 8 oz. sliced mushrooms. Basted the chicken & veggies about every 10 minutes. During the last 8-10 minutes, I removed the cover to lightly brown the chicken and vegetables. This was fabulous!! Will definitely make again as the chicken was very moist & the potatoes were wonderful.

Cheese Ball I

I don't like cheese, but I halved this recipe for my husband's office party. He came back with an empty platter and said everyone loved it. This is a very quick & easy recipe. I used 1/3 less fat block of cream cheese and only about 2/3 cup of chopped pecans -- it didn't need the entire cup.

Creamy Chicken and Rice Soup

To save time, I cooked my chicken the night before. I didn't have enough brown rice, so i threw in some basmati rice, which was fine. I also added some grated carrots and a bay leaf before simmering for 1 hour. This was absolutely delicious!!! Makes a large amount, so I froze about half of it. Will be making this one again!

Sauteed Apples

Made this yesterday morning for breakfast with pancakes. Added 1 tsp. vanilla and increased cinnamon to 1 tsp. Delicious! Reminds me of the fried apples at Cracker Barrel.

Hot Spiced Cider

Absolutely delicious! Easy too! Had to use 1 tsp. ground cloves because I realized I didn't have whole ones. My coffeemaker isn't quite big enough, so I dumped in as much as I could & then poured in the rest after I emptied out the pot. Made a double batch for our Thanksgiving get-together, and everyone loved it! I will make this again and again and again...

Slow Cooker Taco Soup

Oops. I forgot to grab a few of the ingredients at the grocery store so I made some adjustments. I neglected to get tomato sauce, the green chilies, and taco seasoning. I used 2 cups tomato juice & 1 cup water instead of 2 cups water & 1 can sauce. I added a 16 oz. jar of salsa, 2 Tbsp. chili powder (if i hadn't run out, i would have used 3), 1 tsp. of oregano, and 1 1/2 tsp. cumin. Also sprinkled in cayenne pepper to taste. I used 1 can kidney beans, 2 cans great northern beans, & 1 can black beans. Browned the beef & dumped everything into the ceramic pot the night before. Kept in fridge overnight. The next morning, I just got it out & plugged it in. Great with shredded cheese and tortilla chips. mmmmm.
