Jamie's Cranberry Spinach Salad

Love this salad! I substitute pine nuts for the almonds (which also allows me to eliminate the butter). I also cut the sugar in half, and it's still plenty sweet!

Smashed Sweet Potatoes

This is a great way to prepare sweet potatoes! I cut the sugar to 1/4 c., use 1/4 c. o.j. (no zest) and cut the bourbon to 1/4 c. And I don't use the marshmallows. It's still plenty sweet and creamy.

Baked Dijon Salmon

I leave out the pecans and parsley, and my family loves this dish! The butter/mustard/honey followed by bread crumbs is a great way to prepare almost any kind of fish fillet before baking.

Insanely Easy Vegetarian Chili

This chili is so easy - and so good! I add a can of lima beans and serve with shredded cheddar and sour cream as toppings. My husband likes to add some tabasco, too. Yum!

Yellow Squash Casserole

Great recipe! Only gave it 4 stars, because it doesn't need so much butter. I recommend Sauteeing squash and onion in 2 T. butter before mixing with egg, milk and cheese. Then combine crackers with 2 T. melted butter before crumbling over casserole and baking.

Mom's Zucchini Bread

SO good! Just used 1 1/2 t. baking soda instead of soda and powder. And I used 1 1/2 t. pumpkin pie spice instead of 3 t. cinnamon. Also - left walnuts out, because I have a little one with a nut allergy. My kids LOVE this!
