My favorite things to cook
I love to make vegetarian dishes for my meat-loving husband. It's a triumph when he likes what I come up with! I try to create healthy meals for my family without boring them or doing the same dishes over and over.
My cooking triumphs
I feel it's a triumph any time I cook something healthy for someone who thinks healthy can never taste good - and they end up loving it.
My cooking tragedies
I tried to make crab-stuffed artichokes a few years ago. My artichokes turned out tough and grainy, and I haven't tried them again since! I guess I should face that cooking fear some time.

Crispy Eggplant with Spicy Tomato Sauce
EastNashMommy here! So happy that people like this recipe. I wanted to let you know that when I made it last night, I used a few of the baked eggplant rounds to create mini "pizzas." Spread just a little sauce on top and then added the cheese. My kids ate them with their hands - just like little pizzas. 7-year-old and 2-year-old loved it!

Jamie's Cranberry Spinach Salad
Love this salad! I substitute pine nuts for the almonds (which also allows me to eliminate the butter). I also cut the sugar in half, and it's still plenty sweet!

Smashed Sweet Potatoes
This is a great way to prepare sweet potatoes! I cut the sugar to 1/4 c., use 1/4 c. o.j. (no zest) and cut the bourbon to 1/4 c. And I don't use the marshmallows. It's still plenty sweet and creamy.
