Beet Salad with Goat Cheese

I love how the walnuts in syrup turned out just not sure if I really liked them in this salad. As for the dressing, wasnt a big fan of the OJ flavour but might be my purist attitude about balsamic. Next time, no nuts and no OJ and I'm sure it will be very tasty!

Bacon Ranch Chicken Skewers

Made this for a dinner party and despite regretting how much time it took to thread the skewers, it was well worth the effort. Everyone raved how fantastic they were. The flavours combined well and they were just as good as leftovers. Note - I made them ahead of time and put them on a plate covered in plastic wrap in the fridge for 2 hours so I wasn't stuck in the kitchen while my guests arrived. BBQ trick - wrap your serving plate with plastic wrap before putting raw meat on it. Once you put your meat on the grill, remove the plastic wrap and your plate is now safely ready to put the cooked meat on!

Best Buttercream Frosting

I grew up on this recipe and thought it was a family secret - lol It is a 5 star recipe in concept but after reading the reviews and having made the same errors as a young girl learning to bake I wanted to help others so they can make it without fail every time. 1. Use 5 tbsp flour, not 4 2. Cook the flour mixture until it is a thick paste and forms globs that stick together 3. Let the flour mixture cool COMPLETELY 4. Whip the butter and sugar until it is light and fluffy - this will take some time but is critical to prevent a granular texture 5. Add vanilla and flour to fluffy whipped butter and sugar mixture and beat until well blended,thick and fluffy 6. Because there is butter in this recipe, when you refrigerate it be prepared for a change in texture as the butter will harden - it really does not need refridgeration before or after frosting your cake

Caramel Chocolate Corn

I forgot the baking soda first time so made sure to add it the second time - actually found without baking soda it coats the popcorn much better and forms a better coating so things stick more

Cheddar Pear Pie

i used a stronger cheese and loved it - also added 1 cup 35% cream to the tossed pears - yes i know, way more calories, but if im going to eat pie... anyway, never had pear pie before and now i think i like it better than apple!

Banana Muffins I

Don't alter this recipe! Amazing just as it is. Lightest, fluffiest, moistest muffin I have ever had. I used 2 med bananas to make 1 cup. As for flour, I'm sure white, whole wheat or a combination of the two would work just fine. Love that there is no butter or margarine, makes them seem like a healthier choice. Not cake like or super sweet like store bought - they are just right.
