Quick and Easy Mexican Chicken

My husband loved this! I loved how easy it was to make on a day when I wasn't in the mood for a lot of work and mess in the kitchen! I did the same thing some other reviewers did - skipped browning and just put everything in the oven for 35 minutes. Perfect! I also added diced avocado, yum!

Cinnamon and Lime Chicken Fajitas

SOOOO Yummy!!! The potatoes REALLY add a newe texture to fajitas that I've never experienced before. I took other comments into consideration and cut up the chicken and seasoned it before baking. I put the chicken and potatoes in the same baking dish at 350. After 30 minutes I took the chicken out, but let the potatoes cook for 15 more minutes. I made this for my husband and followed it up with some white chocolate creme brulee - we were both pleased!

Ghirardelli® Classic White Chocolate Creme Brulee

This was the first time I've ever tried to make Creme Brulee and it came out very yummy! I cut the recipe in half and used one ramekin. I used what we had on hand - half and half instead of heavy cream, 4 white chocolate truffles instead of the white chocolate baking bar. My ramekin said no broiler on the bottom, but I did anyway - only for 2 minutes, I was a bit nervous... I would've rather used a torch, but didn't have one on hand!

Pumpkin Flax Quickbread

WOWWWW!!! This bread is simply amazing. I have another recipe I've been using for years with lots of sugar, oil, and eggs. So when I found this one and saw all the rave reviews, I had to try it for myself. Mixing flax meal with water is a perfect egg substitute. I also added 1/3 cup chopped walnuts and 1/3 cup craisins. I subbed 1 tsp of pumpkin pie spice for nutmeg and cloves. Most healthy breads are not moist, and very unflavorful. This one will fool everyone! I can't wait to share it with family this Thanksgiving!

Cardamom Granola Bars

I whipped these up in no time and served them to some friends and family - all of them gave rave reviews. Personally I would cut the cardamom in half and perhaps add some cinnamon. I recommend waiting to cut the bars. They were prone to fall apart even after being out of the oven cooling for 15 minutes. So I packed them in with the foil from the pan to keep them together and cut them an hour later. Only one fell apart. I subbed pecans for walnuts. Great recipe!
