Coconut-Tamari Mushroom Soup

Pretty good soup and easy to make. We threw a little more coconut milk and lime juice into the mix to suit our tastes. I wonder if lemongrass would be good in this soup.

Barley Bake

I dunno if I did something(s) wrong, but this took a LOT longer to cook to get the liquid absorbed and to get the barley at a palatable texture. Perhaps I didn't use "pearl" barley... Not quite sure. So, I guess my review doesn't really count that much! Oh, well. I'll give this one a shot again because the flavor was good.

Apple Carrot Muffins

We managed to use spelt bran and craisins instead of the raisin bran. But, it has been so long since we made these that I can't remember the measurements... Oops! Very tasty muffins, though!

Pistachio Crusted Chicken Breasts with Sun-Dried Cherry and Orange Sauce

We made this for ourselves on Valentine's Day last year (in '09). It was TERRIFIC. We also made orange juice tzimmes (glorified carrot coins) and mushroom risotto to eat with the chicken. We had plenty of leftovers! Accompanying recipes are on this website. Tzimmes -

POM Creme Brulee

Mashed Potato Muffins

We added a couple beets and some baby bella mushrooms sauteed in dill to the mash. Ended up with 24+ muffins! Topped with carrot-cherry wine sauce. Served with wilted collard greens and minced garlic.

Slow Cooker Beef Stew I

I bit the bullet and used some Angus beef instead of stew meat. YUM! But, we tried this recipe again with stew meat, too. And, everyone loved it. Great simple crowd-pleaser. We will use this recipe over and over. It's a good base recipe to tweak toward your own personal tastes.

Orange Juice Tzimmes

This has become a holiday staple in our house. We use dates instead of prunes. Very tasty and complements just about anything. Works as an appetizer, main veggie, or a dessert even. Have fun making it - it makes your house smell terrific!

Smoky Four Cheese Macaroni Bake

Great recipe. A little time consuming for mac n cheese, but worth it. I used smoked gouda instead of Swiss and Colby Jack instead of Monterey. I imagine Manchester cheese would be good somewhere in there, too. Do add the liquid smoke when you make this. Mmmmm!

Creamed Peas and New Potatoes

This recipe is AWESOME!!!!! Simple and incredibly inexpensive to make (only *5* main ingredients + all of them can be purchased in large quantities for very little money = not too shabby!). I made a big pot of this meal for less than $10. You can't beat it for the amount of rich flavor you get out of this easy recipe. You won't be disappointed (I could praise this dish all day!). I can't wait to stop being full so I can eat more of it. I will definitely be making this again. SUGGESTIONS ----------------- -Triple or quadruple this recipe because you will want to share it with everyone you know! Plus, it makes for great leftovers. -Before adding potatoes to sauce with peas, mash the peas in the sauce or put the peas in a food processor and give a slight chop on them before adding to sauce. -Season with salt (black truffle finishing salt works great), fresh coarsely ground pepper, and a generous amount of turmeric. It will change your life. :) -I used medium russet potatoes (which are less than $5 for a huge bag) and had no flavor issues. Baby red potatoes probably would have added to the flavor, but I didn't feel like running to the store to make that kind of commitment. -I honestly don't know what shelled English peas are, but I used store-brand frozen peas and everything was terrific.
