Orange Juice Jelly

O.k. Here's the skinny on this. It didn't work. I made the recipe exactly as stated and it didn't jell. Not even syrup consistency! So I went and bought fresh pectin, MCP this time, and reprocessed the whole batch. I got it to jell by cooking it down until it coated the spoon. I liked the idea of a different jelly but this wasn't worth the hassle in my opinion.

Cheese and Sausage Stuffed Zucchini

Using exactly the amounts of ingredients suggested with a few minor cheese substitutions, this recipe made exactly enough stuffing for two (roughly 13") zucchini. Way too much for four people. I would suggest cutting it in half. Also cottage cheese is not a favorite of most kids. It doesn't seem integral, I would suggest something else more palatable. My zucchini was quite watery out of the micro and almost too soft, if you have a 1000 watt or higher, shorten the micro time. The taste is good but the zucchini was still not cooked all of the way through at the end of the cooking time.

Christmas Brunch Casserole

Made some adjustments to original recipe. Used eight eggs, mixed everything together, added only the garlic salt and omitted regular salt, thawed hash browns in micro and removed excess moisture. Also I used a mix of cheddar cheese and mozzarella and added french fried onions last five minutes only. This was perfect in appearance and everyone liked it. I also used two generous cups of milk. Perfect.

Carrot Casserole

This recipe was alright. Wayyyyy to much cinnamon and way too sweet. My dh loves the Carrot Souffle recipe from this site and I think we'll stick with that one.

Fast Food Biscuits

Cooked for the length of time stated the biscuits were very hard and almost burnt. When I cut the cooking time by half the biscuits were fine.

Classic Cinnamon Rolls

Excellent. The only changes I made were to add chopped almonds and raisins to the filling. Easily the best cinnamon roll I've ever had. My Kitchen Aid mixer did not have any trouble, but if you have the smaller bowl watch that it doesn't overflow the flour. We usually do have mashed potatoes so this recipe uses up leftovers as well. Do not flip the pan as one rater suggested. It will smash the rolls. The icing is sufficient for the 20 rolls I ended up with.

Delicious Gluten-Free Pancakes

Stop the car. The search for a real tasting pancake is over! My little boy couldn't believe these pancakes were gluten free. Yeah!I've tried a lot of recipes and this one was by far the best. I did question the amount of water indicated, but the batter did thicken after a few minutes, so I added the water gradually .

Chocolate Chip Pancakes

Kids loved these pancakes. I didn't have chocolate milk so I used Ovaltine instead. Also I read the other reviews first and added a bit more flour to avoid the crepe effect. Kids gave the recipe five stars I give it four since I had to adjust the recipe a bit. Overall great recipe.

Carrot Souffle

This has become my husbands favorite dish. It's not hard to make and it always gets rave reviews. We have added it to our Thanksgiving menu this year. I find it a little sweet but my family loves it just the way it's written.

Snickerdoodle Chex® Mix

The first time I made this it was way too sweet. I used the same amount of sugar but doubled the amount of cereal and popcorn. I also increased the margarine by a couple of tablespoons. Overall this recipe was a big hit. My husband tried to hide it from the children!
