Spaghetti Salad I

Perfectly spicy! I added black olives and left out the onions. I only had about 1+ cup of italian dressing and it was more than enough. I think a whole bottle would have been a bit to much- it might tame down the "pepper" taste, but my family loved it! Thanks for a great base recipe!

Blueberry Zucchini Bread

What to do with all the Zucchini's??? Make this delicious bread! We are watching our diets so I made some health conscious substitutions. Apple sauce for oil & 1/2 sugar for Splenda. The bread didn't rise as much as I would imagine it would had I made it exactly as written. The taste with the healthy substitutions was still fantastic. Thanks for a great recipe!

Cucumber Salad

No thank you... I made it exactly as written. My family has a cucumber salad recipe that calls for mayo/ vinegar/ sugar / onion salt / celery salt as the dressing so I thought this might be close with the sweet/tangy combo or vanilla yogurt & sour cream... I have to say (IMO) it wasn't even edible.

Feta Cheese Mashed Potatoes

Excellent! I needed a new potato side dish for Easter since I was unable to get all the ingredients for my normal potato dish....these were perfect! I have no doubt these will be served again!

Broccoli with Garlic Butter and Cashews

This was a great side dish. I expected it to be very salty b/c of the soy sauce, but using lite soy sauce and the vinegar must cut the salty taste of the soy sauce which gave this dish a mild flavor.

Banana Streusel Muffins

I had some bananas and light sour cream that needed to be used up and when I came across this recipe I thought I would give it a try. Overall these are good, if you are looking for a sweet banana treat you might be slightly disappointed. Not much banana flavor- I think the sour cream diminishes the banana taste. If you bored with traditional banana muffins give these a try.

Apple Cookies

I gave this recipe 5 stars b/c I think its a great way to use up those lingering apples in the crisper. I did add 1/2 tsp of cinnamon and 1/4 tsp of nutmeg. My family isn't a fan of icing on cookies so I opted to not drizzle that on top but I did Dr'd it up to use up some other things in my pantry.... coconut & white choc chips..... Everyone really enjoyed them. I lowered the temp to 375 and cooked them a few extra minutes and they were great! Thanks for a great recipe!

Coconut Meringues

Easy & Good! Bonus is these goodies won't derail your diet at the holidays.... I made a few batches and experimented with different extracts but the coconut ones were by far my favorite! I added 2 drops of green food coloring with the extract. I think next time I might tint the coconut RED and the meringues Green... very festive! One more tip- instead of dropping them by teaspoons I put it in a Qt size ziplock bag and cut the tip and piped them on so I could add a slight swirl- they turned out great and look pretty- see picture

Cracked Sugar Cookies I

These are AMAZING!!! If you are looking for a SOFT and BUTTERY tasting cookie, look no farther! Thanks for a great recipe! These will be a staple at the Holidays and anytime I need a treat! * I chilled the dough for 2 days and rolled them cold- no problems. I would be willing to bet this dough could be frozen with much success! Half of the batch I made as directed, 2nd half I dipped half of each ball in colored sugar (dip the top in sugar and lay them on their side to bake)! Excellent!

Honeybee Cookies

These were tasty cookies, but just not the texture that I rave about- thin, and chew. After reading some reviews I think I may have over mixed them so it may be a recipe I will make again and be cautious with mixing. I made some plain and some with chocolate chips and some with coconut- The coconut was my favorite by far!

Enchilada Casserole III

I was craving Mexican Food but didn't want to run to the store- I had everything for this recipe except refried beans. I used black beans instead and I think it turned out just fine! I will make this recipe again as written with refried beans next time. Overall a quick and easy recipe and the household liked it, but no one RAVED about it.

Spaghetti Sauce II

Made this tonight and I finally figured out what was missing all these years from every Spaghetti Sauce I ever made... RED WINE!!! It was excellent. I didn't want to run out to the store this afternoon when I stumbled upon this recipe so I had to make a few substitutions - 1.) I only had one can of tomato paste so I reduced a can of tomato sauce down a bit and it work fine. 2.) I used ground beef instead of Italian Sausage. Thanks for a great recipe!

Mijo's Slow Cooker Shredded Beef

We really enjoyed this recipe. My only warning - be careful which "heat" of hot pepper sauce you use. I used the HOTTEST one we had since it was such a large amount of meat - wow, it sure had a kick. My husband and son loved it, but I think they would put hot sauce on cereal. I would also say that this recipe is very versatile you could use this meat for lots of things. I put it in the crock pot over night and we had it for a football game half time. Perfect! * I didn't have liquid smoke so I substituted 2 tsp molasses and it gave it a slight smokey flavor.

Peanut Butter Kiss Cookies

These are awesome! I've used the same recipe for these kind of cookies for 15 years (from my Mom who likes her cookies to be crisp) and this year I thought I'd try something new. So glad I did, not only are these easier but they are soft just the way my family likes them. I did split up the sugars between brown, powdered and SPLENDA and they turned out great!

Banana Custard Scrunch

This was a refreshing twist on desert. Sometimes you want something sweet after dinner but not too rich. This fits the bill! I added 1 tblsp of brown sugar to the oats and honey to make it more of a crumble type topping.

Tomato Spinach and Basil Soup

This was so delicious! I added 1.5 cups of cheese tortellini to it just to make sure I could serve it as a meal in itself with out my husband and son wondering if there was more in the oven...perfect. I will for sure make this again this winter. Thanks for posting a great recipe!
