Blueberry Pound Cake

So yummy! We've made this for a couple occasions. Once topped it with chocolate ganache, the other time used whipped cream icing. Both times it was very good, although my favorite was the ganache. :-)

Slow Cooker Apple Crisp

Doubled this and cooked in a 6 qt on high for 2-3 hours, then moved to low for another hour. Served it alone for dessert. AMAZING! Very yummy. The top didn't crisp because I didn't take the lid off, but tasted amazing anyway. Will for sure make this again. If you aren't much for sweet, skimp on the sugar. I made it with *almost* all the sugar, and it was sweet but not overly so.

Hot Chocolate Mix II

Too watery. Tried adding stuff to make it better, can't get the balance right. It's so watery it doesn't even taste right in milk. Very sad.

Slow Cooker Tapioca Pudding

Delish! For those having trouble with the eggs, just leave them out! My crock pot cooks very hot, so I have to leave them out or I get a very scrambled egg tasting pudding. I might try it again and add the eggs at the end with the crock pot on the "keep warm" setting and see if that is cool enough as opposed to low. KEY: check every hour at first, then check every 30 minutes closer to the end.

Mediterranean Quinoa Salad

Seriously enjoy this recipe. We make it often. I have also made several variations of it as it is easy to play with. For a quieter version for preggo tummy and toddlers, I leave out the lemon and balsamic vinegar and just add olive oil to taste. Have used canned chicken. Also, I use chicken broth instead of the bouillon cube and that is tasty as well. A red or yellow bell pepper can be used for a sweeter flavor. Again, AMAZING recipe, easy to play with, keeps very well! Makes a great picnic meal.
