Cake Mix Cookies VIII

So many reviewers said to add 2 tablespoons of oil plus a teaspoon of vanilla extract, so that was what I did. I like to bake most of my desserts from scratch so I felt a bit like I was cheating by using a boxed cake mix... but the cookies turned out SO GOOD -- soft and chewy! I've tried many good from-scratch cookie recipes but they're never this soft and chewy. I know many friends are going to ask for the recipe once they try these cookies and I'm going to have to sheepishly say it's actually a boxed cake mix! Anyway, I was able to get 25 3-inch cookies and they spread to just the right thickness on their own -- I didn't have to flatten them a bit before baking like some reviewers had to. I added walnuts along w/ milk chocolate chips and they were picture-perfect. I baked at 350 F for 10 minutes and at first, they looked as if they might be a little under-baked or too gooey, but after they cooled completely, they were perfect. Put them in an airtight container and they were still super soft and chewy the next morning (didn't harden up).

Southern Italian Thanksgiving Stuffing

Decided to try a new stuffing recipe for this year's Thanksgiving and did a test run (scaled back to half the servings) on this one last night. It is truly the tastiest stuffing I have ever tried. It's also the most time-consuming and expensive, but I think it's worth it. I first made the cornbread from scratch using "Grandmother's Buttermilk Cornbread Recipe" from this site, then I crumbled it for this recipe. I've never been big on stuffing, but now I think it's because I never had good stuffing before.

World's Best Lasagna

This definitely took more work (and more ingredients!) than other lasagna recipes that I've tried, but it is truly the best lasagna I've ever eaten. Family loved it.

Meatball Nirvana

OK, so I followed another reviewer's suggestion to use 1/2 lb. beef + 1/2 lb. pork, and to replace the skim milk w/ 1/2 cup ricotta cheese. I know thus I'm not exactly rating the original recipe as submitted but they came out really, really GOOD! Moist and flavorful, and I loved the spicy kick from the crushed red pepper flakes! The next time I'm serving appetizers, I'll be sure to make these. Definitely a keeper recipe. Thanks for sharing!

Fresh Southern Peach Cobbler

It was my 1st time making peach cobbler -- and it was better than any that I have tried at restaurants or purchased from stores. My husband and I absolutely loved the crust -- I might make 1 1/2 times the crust next time. It was not too sweet for us. I can't wait to make it again. Thank you SO much for sharing this recipe!

Streusel Topped Blueberry Muffins

I made these muffins today -- they were pretty good! They weren't as sweet as the muffins that I've purchased at the store, but I think I read a review saying that muffins aren't supposed to be sweet like cupcakes. I guess I prefer mine just a bit sweeter, so next time I might try using 1 cup of sugar instead of 3/4 cup. Mine took 30 minutes to be done, and they were very moist. Thanks for the tip/trick about sprinkling flour over the blueberries to prevent a purple batter! I learned something new. :)

Red Velvet Cake

I tried this recipe last night and was very pleased! The 1st time I made Red Velvet Cake, I tried a box of Duncan Hines Red Velvet Cake mix and wasn't too impressed. Nevertheless, my brother likes Red Velvet so I decided to make it from scratch w/ this recipe. It was very good. Disclaimer: I followed other reviewers' suggestions of using 1 cup of oil (instead of the shortening), increasing the sugar to 2 cups and increasing the cocoa to 4 tablespoons. I made the frosting and it tasted very good (and was not too sweet).

Apple Cinnamon Oatmeal Bread

The house smelled REALLY good while this bread was baking, and it looked very nice/professional coming out of the oven. However, I found it a bit dry and bland. =| Not sure if I did anything wrong; I double-checked the ingredients and I don't think I omitted anything.

Abby's Super Zucchini Loaf

The bread came out looking really nice, and the flavor was good. My family didn't think it was "great," so I'm not in a rush to make it again. However, if someone wants zucchini-walnut bread I would recommend this recipe.

Allison's Supreme Chocolate Chip Cookies

The coffee-flavored liqueur really does make a difference; I use Kahlua. One of the best cookie dough recipes I've come across. The cookies DON'T go completely flat (w/ bumps poking out) while baking, and stay soft (usually don't last more than 2 days at my house) after baking. I've tried variations w/ sweetened dried cranberries and raisins. Thanks for sharing this wonderful recipe.

Absolute Mexican Cornbread

I have been making this recipe for years and it's still one of the most-requested things that I bake. (I simply omit the green chile peppers for "regular," instead of Mexican, cornbread.) I've passed along the recipe to many others who have requested it. I'm not sure why some people were reviewing it as being too greasy -- I don't have that problem at all. Thanks for sharing.
