Meatball Nirvana
OK, so I followed another reviewer's suggestion to use 1/2 lb. beef + 1/2 lb. pork, and to replace the skim milk w/ 1/2 cup ricotta cheese. I know thus I'm not exactly rating the original recipe as submitted but they came out really, really GOOD! Moist and flavorful, and I loved the spicy kick from the crushed red pepper flakes! The next time I'm serving appetizers, I'll be sure to make these. Definitely a keeper recipe. Thanks for sharing!
