Low Fat Apple Bran Muffins

Reviewed: Feb. 16, 2010
Delicious! They are a little on the non-sweet side, so if you want to sweeten them up i would recommend some apple butter. But I like them just fine plain

Halibut with Rice Wine

Reviewed: Feb. 12, 2010
very good. since halibut is so expensive, i used basa swai (?) instead, which is much much cheaper, and it still turned out very tasty. paired with asparagus.

Blueberry Zucchini Bread

Reviewed: Aug. 26, 2012
substituted peaches instead of blueberries. Did 1 cup whole wheat flour and 1 cup regular flour. Cut the sugar by 1/4 cup.

Crispy Gingersnaps

DELICIOUS! If you love almond as much as I do, try adding 1 tsp almond extract and 1 cup sliced almonds. The ginger and almond flavors compliment each other in a delectable way.

I left out the raisins, and they were still delicious. But they were even better with the cream cheese frosting i put on top.

Strawberry Kiwi Tartlets

Reviewed: Oct. 15, 2009
Delicious! my only suggestion would be that when you blenderize the kiwis with honey, puree the kiwis first, THEN put the honey in. i put the honey in first, and it all sunk to the bottom of the processor.

Scalloped Potatoes II

Reviewed: Oct. 15, 2009
with a little bit of tweaking, this was wonderful! the recipe given is a little bland, so to add some flavor i added parmesan cheese to the mixture. then, once it started browning on top (less than 10 min left to bake) i sprinkled some more cheese on top. delicious!

Balsamic-Glazed Salmon Fillets

Reviewed: Feb. 20, 2010
a little on the sweet side. i think a good addition to this recipe (if someone could figure it out) would be some kind of chili sauce to spice it up a little. but baked salmon is always juicy and wonderful :)

Orange Pecan French Toast

I used challah bread instead of french bread, and it tasted great. A little too sweet, though.

Karen's Baked Banana Stuffed French Toast

Reviewed: Jan. 10, 2010
i needed to add another egg (and appropriate amounts of extra milk, vanilla, and cinnamon) because there wasnt enough of the egg mixture to coat all of the bread. my only other "complaint" was that a couple of the pieces were soggy; i guess they just need to bake longer than 8 minutes. other than that, it was delicious!

Broccoli Beef I

Reviewed: Jan. 9, 2010
First, I was impressed by how thick the sauce turned out. Definitely did not need the corn starch. I was, however, disappointed by how sweet this recipe was. I'm not sure how i feel about my broccoli beef being sugary. I think next time I'll cut back on the sugar by like 75% and add a little more salt.
