Chuck's Favorite Mac and Cheese

This is the best mac and cheese I have ever made! I altered it by adding a few slices of crumbled bacon, and a small diced sweet onion. I also leave off the bread crumb topping.

BBQ Pork for Sandwiches

This recipe is so easy, and super yummy! Instead of ribs, I use either a pork shoulder or butt and it falls apart when finished.

Creamy Potato Casserole

This is a really good recipe. I use diced red skinned potatoes instead of frozen hash brown potatoes. I also suggest cooking it at a higher temp (400 degreees) because the cheese on top takes too long to brown at 350 degrees.

Banana Cake VI

This is a wonderful recipe. I made it for my fiance for his birthday and he loved it! Also, I added crushed walnuts on top. It takes a little bit of work, but it is very easy and worth every minute!

Country Chicken

This recipe is WONDERFUL! I changed a couple things. I seasoned the chicken with garlic powder & poultry season. For the gravy...I only used about 4oz of sour cream, and in a small bowl, I combined 4 tsp of cornstarch & a 1/2 cup of milk. Stir this thoroughly, and mix in with the other ingredients to make a wonderful gravy. When its about 5 mins away from being done, I add a 4oz can of mushrooms. I also added more chicken stock to this to thin it out just a little. We serve this over rice. My fiancé and I loved this, and I will make this again for sure!

Meatball Spaghetti Sauce

I only used this recipe to make the meatballs, and used a canned sauce. I used ground turkey instead of beef. The meatballs were OK at best, but were mushy on the inside. They were done (well cooked) but just had a mushy consistency. I will continue to look for a better meatball recipe.

Gourmet Sweet Potato Classic

I followed this recipe exactly, except I only used 4 sweet potatoes (which I peeled, boiled, then mashed in a Kitchen Aid mixer), and I used 2% milk instead of heavy cream. It did not turn out sweet enough. There was too much sweet potato. I think this would turn out better with more sugar, and less sweet potato. Otherwise, very good!

Bacon Turnip Mash

This recipe was really good! The only thing it needed in my opinion was more salt. Although, I didn't use the bacon fat, so this could have altered the taste. Otherwise, it was really good, will make it again!

Brown Sugar Banana Nut Bread I

This recipe was delicious!! I only used 3 very ripe bananas, instead of 4, used twice the vanilla, twice the walnuts, and added about 1 tablespoon of cinnamon. I split the mixture into two 8 x 3 1/2 inch loaf pans. It may have overflowed if I used only one pan. It was perfect! This is by far the best banana bread I have ever tasted! My fiancé and I loved it, and will be making it again!

Baked Chicken

The idea sounds nice, but this didn't come out so well at all. The cornflake breading all ripped off and the chicken ended up tough and tasted quite odd. I really thought it was going to be good, because it sounded great...but I actually had to make something else! I was really disappointed!

Chicken Noodle Casserole I

This recipe was absolutely wonderful! I did follow what others said by adding a couple things for flavor so it wouldn't be bland. I added a half of a sweet onion (diced), a few stalks of fresh celery (diced), and Cavander's Greek seasoning. Yum!!

Slow Cooker Creamed Corn

This was absolutely delicious but slightly too rich for me & my boyfriend's taste. Next time, I would cut the butter in half--the recipes calls for 1/2 cup (1 stick), which makes it super greasy along with the cream cheese. Otherwise, this was really wonderful!

Cajun Baked Catfish

I am not a big fan of seafood--I will try a few things here and there, but it's just not my favorite. However, my dad went on a fishing trip and had more catfish than he knew what to do with, so of course I ended up with some in my freezer. I decided to try this, and it was the best tasting catfish I'd had in my whole life!! I actually ate the whole piece instead of picking at it like I usually do with fish. The flavor was outstanding! It was terribly easy too! I really recommend this especially for those who are shy of fish :)

Crustless Spinach Quiche

This was absolutely wonderful! I couldn't find shredded Muenster, so I used shredded extra sharp cheddar and it was a great substitution. This recipe could be easily altered to make any kind of crustless quiche.
