World's Best Lasagna

This is the best recipe of lasagna I've found. It's worth all of the hard work. My husband loved the sauce so much that I usually just end up cooking the sauce to freeze so we can thaw it out for tortellini, baked ziti, spaghetti, or lasagna. I added more seasoning than it called for to suit our tastes. We never go without this.

Marbled Pumpkin Cheesecake

This was my first cheesecake I've ever made. Turned out amazing, was a huge hit at the dinner party I took it to. And my husband who isn't a big fan of pumpkin loved it! The only thing they didn't say was to put a pan of water under the cheesecake to keep it from cracking. You also have to be careful not to overbeat the batter once you add the eggs in or it'll crack when you bake it as well. Luckily, I knew how to make a cheesecake and with those extra precautions & step, it turned out perfectly. I did add a little more cinnamon than it called for, but it was perfect.

Dreamy Nighttime Drink

This was very relaxing and comforting. Although, I'm not a huge fan of the flavor of warm milk. I ended up needing to add more vanilla & cinnamon. Will make it again.

Apple Squares

These were AMAZING!! The only thing I changed was add 2 large apples (a little over 2 cups) and a little more cinnamon in the mixture. Made the house smell like heaven and they tasted so good. I can eat an entire batch by myself. Great to heat up for breakfast in the mornings.

Mexican Chicken Corn Chowder

I have been looking for a cream based corn chowder for a long time. This recipe was amazing! I changed a few things but I never follow recipes to a T anyway. I used shredded chicken from a cooked rotisserie chicken sauteed it in butter, onion, garlic & added cumin while boiling it but I didn't measure it out. I think I added a little over double of cumin than what it asked for. I used heavy cream instead of half & half, used a can of cream corn & a cup of frozen corn, a can of chicken broth, and a can of hot rotel, drained. I tripled the amount of cheese that it called for, and it still didn't turn out too cheesy. I did let it cook for about 20 minutes on low after I added everything so that all of the flavors blended together more. I served it with crispy baked corn tortillas & dashes of Frank's Hot Sauce. My husband had 3 bowls of it. It was better the 2nd day & at it's best on the 3rd! Definitely a cold weather must!!
