Classic Macaroni Salad
I have made it twice...first as directed, but used a red bell pepper instead of green since no one in my family cares for them and deleting the chopped pimento, and because I had it, a RED onion.....it was "ok". Not a fan of that sweet/tart taste. I had one child who detested it and one child who loved it. The other kids were "so-so" with it. The next time I made it, I completely cut out both the vinegar and the sugar and instead of using 2 1/2 tbsp of yellow mustard, I used 1/4 cup honey mustard dipping sauce (I use Kents brand). I left everything else the same like I did before. Everyone, ALL my kids loved it. I think the shredded carrots, celery, red onion, red pepper and cucumber gives it a beautiful color contrast and yummy crunch.
