Amy's Cilantro Cream Sauce

I followed the bread machine suggestion. Used whole wheat bread flour and regular unbleached flour and this came out great. Also added several tablespoons of milllet, ground flax and sunflower seeds. Yum!

Rhubarb Cake I

This is just way to sweet for my tastebuds and my colleagues agreed. However, with the exception of this being overly sugary it does have a nice taste and it is very moist. I think I will try using just 1 cup of brown sugar next time (instead of white) and skipping the topping altogether.

Cinnamon Roasted Sweet Potatoes

This was really easy to make. I had two small-med sweet potatoes that I cut up and baked in my toaster oven. I lightly sprayed them with canola oil. After the 20 min I decided to toss them with meltd butter and the rest of the ingredients. The lime at the end really does give it a nice kick.

Coconut Curried Tofu with Green Beans and Coconut Rice

This was a little too bland for me. Unfortunately, I can't suggest how to improve it since this was the first time I tried making a curry dish... though I've had plenty in restaurants. I wouldn't make this again, but would rather keep looking for a tastier recipes.
