Tatertot Casserole

My family loves when I make this simple meal. I add onion and garlic to the beef. When I am assembling it in the casserole dish, I top the beef with a layer of frozen veggies, then a little cheese before adding the tater tots. Really is yummy.

Fresh Rhubarb Pie

This is a really good pie! I used the "Best Ever Pie Crust", but with half butter/half shortening and I added an extra cup of fruit. Going by other viewers, I added an extra Tb of flour so it wouldn't be runny, which was just right. I would use a little less sugar next time I make this one, but other than that it was quite good.

Honey Corn Bread

I also think this is the best corn bread I've ever eaten! I do think it's best for a breakfast or a dessert though. I made it to go along with a pot of sweet potato chilli, but it was too sweet. We ended up drizzling a little bit of real maple syrup on it and serving it for dessert. I cooked it in a parchment lined 9x9 cake pan for about 25 minutes and it was perfect. This one is a keeper!

Quebec Pickled Eggs

I'm wondering if the poster left out the water by accident...? I would add about 1 3/4 - 2 cups of water to the recipe. The mix of spices make for a nice flavour.

Classic Waffles

These are wonderful basic waffles. I make them as per the recipe, but add cinnamon. My kids love them with peanut butter and jam. Trick to keeping the waffles crispy is to not put them immediately on a plate (the steam makes them soggy). I throw waffles in warm oven for 10-15 seconds to allow the steam to rise off before putting them on plates.

Black Beans a la Olla

My kids and I really liked this. We used it for burritos topped with sour cream and cheddar cheese. I added an extra 1/2 can of black beans. I used canned tomatoes as that is what I had on hand. I also didn't have cilantro so used 1 Tb of coriander in it's place. Will be making it again.

Chocolate Mint Candies Cookies

This is really a good recipe. To those that found it too dry/crunchie you might have over cooked them or were too generous with the amount of flour. I would suggest you fluff the flour with a fork before lightly measuring it out. When I made them, I used 1 1/4 cup milk chocolate chips and 3/4 cup semi sweet. I added 2 tsp of mint extract and 1 tsp vanilla to the melted chocolate. I also only added 1 Tb of the water so it would firm up quicker in the fridge. Be careful not to make the balls of dough too big because they really spread out while cooking. These will be a keeper in our house.

Saltine Toffee Cookies

If you're a chocolate/toffee fan, you will love these! I like my toffee to be more crunchy, so I boil for 8-10 minutes (start timing when it comes to a full rolling boil) instead of 5 before putting it in the oven (once it comes to a full rolling boil, do not stir it). Once in the oven, I wait until it starts to bubble before timing it for 3-5 minutes. I also like mine with a mixture of peanut butter and milk choclate chips...so yummy! It tastes like a peanut butter Skor bar.

Whipped Shortbread Cookies

Always up for a challenge, I thought I would try this recipe. I give it a 4 because while the flavour and texture are scrumptous, you can not pick them up with your fingers as they just dissolve. I would re-name them Cherry Sand Cookies because of this. By the way, I added 1 tsp vanilla and for some I used cherry jam, some I used marsh. cherries... I would make these again, if I can figure out how to firm them up.

Banana Oatmeal Crumb Cake

My family and I really liked this recipe. I doubled it and added a cup of blueberries, subbed applesauce for half of the butter, added 1 tsp cinnamon, 1/4 tsp nutmeg, 1/8 tsp ground cloves and baked in a 9x13 pan. Like everyone else said, it is better the next day as it gets more moist upon sitting. For best banana flavour, you must use really, really ripe (almost black) bananas.

I wouldn't say the flavour of these cookies is that much different than any of the other popular chocolate chip cookie recipes, but the texture was nice. I added walnuts to my version and made them much smaller (about 1 Tb and they were the perfect size). I cooked them for 14 minutes at 305 degrees.

Tomato-Cream Sauce for Pasta

This is a really tasty recipe. Since it really only makes 3 servings, I added about 1/2 a green pepper and 1/2 cup of regular canned pasta sauce to help increase it to 4 small servings. Also, to make it thicker just simmer it uncovered until it is a thick as you want it. Stir often.

Garlic Mashed Potatoes Secret Recipe

These really are good. I made a scaled down version to feed a family of 5 for our Thanksgiving dinner. The only change I made was to add a small amount of sweet potato (maybe 1/4 the amount of the reg. potato) to the pot for the added nutrients as well as a little bit of light cream.

I'm not sure if these turned out the way they were supposed to or not, but we liked them. I followed other reviewers and added some garlic, but otherwise they didn't have a lot of flavour. As they cooked, I put each one in a paper towel lined dish with a lid. I also brushed them lightly with butter. They turned out nice and soft.

Fluffy Pancakes

These pancakes had a really nice flavour. I doubled the recipe and also added a tsp of cinnamon. The flavour reminded me of a donut recipe my mom used to make when I was a kid. I will make these again.

Mushroom and Potato Chowder

This is my new favourite soup recipe. I doubled the potatoes to make it thicker and added garlic and parsley. I diced vegetables and mushrooms quite small and sauteed the mushrooms with the onions. I ran the hand blender through it to make it smoother just before adding the cream and cheese. I suggest serving with fresh from the oven biscuits. Yum!!
