No Bake Chocolate Oatmeal Cookies

Reviewed: Sep. 26, 2009
Chewy and not too sweet, perfect for curing that chocolate craving without over doing it, even my hubby who normally dosn't like vegan anything ate half the batch. I found the mixture a little runny so addes a 1/4 cup non-sweetened coconut flakes and a tsp of ground crystalized ginger (because I am addicted to it and can't seem to cook or bake anything without it lately!) and we ate the whole batch while watching a movie. Definitely going to make more tomorrow and will add to my holiday baking list this year. Thanks!

Buttery Soft Pretzels

Reviewed: Sep. 28, 2009
These were delicious... the second time around! I didn't proof the yeast first time and think that batch must have been a dud. The second (good) batch I doubled the yeast and sugar while it proofed let a second rise after rolling out the dough and forming the pretzels. I boiled the pretzles for about a minute in the soda solution and used paper towels to get some of the water off before putting them on the baking tray. They came out golden and chewy inside, just the way we like them, and I brushed them with a little garlic powder mixed in with salted butter. Labour intensive, but delicious. I live in Egypt and can't get the "mall" pretzels here, so this was a nice treat to bring home a little closer, thanks for posting!

Maple Oat Bread

Reviewed: Oct. 7, 2009
This is one of the easiest bread recipes I've ever tried, and made a sweet, crusty loaf, absolutely delicious! Followed the lead of others and only used 1/3 cup water for the yeast, and added a tsp of white sugar to proof, as I find I get a getter rise this way. Used the dough hooks on my handheld mixer and used 4 cups of flour total, baked in a regular greased loaf pan and only left it for about 30 mins. Came out beautiful and is a new fav for breakfast breads in our house!

Best Chocolate Chip Cookies

Reviewed: Nov. 3, 2009
I followed a previous review and baked the first 4 cookies using only 2 1/4 cups flour for the whole batch, and they came out delicious, but they spread quite a bit. I put another 1/2 cup in the rest of the batter and and they were DELICIOUS! Gotta say, a new fav in my recipe Box! I have always had a tough time making cookies, but these were simple, quick and FANTASTIC! Hubby taking a whole bunch to the office tomorrow or I will eat them ALL!

Quick and Easy Cheese Bread

Reviewed: Nov. 15, 2009
I took this out of the oven about 1/2 an hour ago and have been waiting patiently for it to settle, it smells so good!! I followed other reviewers advice and increased milk to 1 cup, decreased sugar to 2 tbs, added 1 tbs garlic powder and 1 tbs onion powder, some chopped green onions, and 2 tbs Italian seasoning (the same one I use in pasta sauce recipes), and sprinkled some cheese on top for the last 10 mins of baking time. I also had to turn the heat way down for the last 10 mins or so, as the outside had a beautiful crust, but the inside was still mushy. Came out beautifully! Savory and cheesy, with a crisp thick crust and soft delicious inside. I agree that it's not the best "bread" recipe ever, but an excellent quick and hearty accompaniment bread. We'll have this with a light chicken salad for dinner tonight. Thanks for the basic recipe, I'm sure you could do all sorts of variations with this recipe, next time I think I'll try parmesean, basil and sundried tomatoes!

Best Brownies

Reviewed: Nov. 15, 2009
DELICIOUS! I unfortunately have a gas oven which makes regulating exact temperstures for baking impossible, so I tend to burn anything with chocolate in it. Apprehensive though I was, these came out chewy, crisp around the edges and absolutely perfect, not cakey at all. I added 3 tsp of instant coffee to add a cappuccino flavour and and 1 tsp of peanut butter to the frosting to make it a little creamier. The girls at dinner last night ate a whole plate, and my husband asked me to bake a batch for his buddies while they watch the big football match this week. Not typical "guy" food, but whatever!

Argentine Lentil Stew

Reviewed: Jan. 25, 2010
I CANNOT SAY ENOUGH ABOUT THIS STEW!!! I was looking for something quick and simple and warming, and this fit the bill to a T! I adde cubed potatoe and a tsp of chili powder for some kick, and it came out absolutely perfect, served over steamed rice with a grilled chicken breast. My husband actually stopped watching the football match for a full 30 seconds to tell me how delicious it was, and if you knew my husband and his obssession with football, you would know what a compliment this is! Thanks so much Frank, this one is going to be a new favourite in my recipe box! I'd give it a 10 if I could.

Quick Quiche

Reviewed: Jul. 24, 2010
And excellent idea! A vegetarian option: We don't eat meat, so I crumbled some Romy cheese (the Egyptian equivalent of Parmesean) in the food processor with some coarse breadcrumbs and a few drops of olive oil, and lightly packed into large, heavy ramekins (the same ones I use for souffles). Omitted Bacon from the recipe, but added 2 tsps garlic pwdr, a dash of Italian herbs, spinach and broccoli and sprinkled more cheese on top. FABULOUS! My husband ate two, and he is usually a staunch believer that eggs should only ever be fried, sunny side up! Quick, easy and quick clean up. Merci!
