Authentic German Potato Salad

DH and I enjoyed this salad. My rating is pretty much based on the written recipe. The directions could be a bit clearer, and there was no specification as to what type of potatoes would be best. I used red; the texture would certainly be different with russets. I did take the suggestion of others and only used about a teaspoon of sugar; that was plenty sweet enough. All in all, this is a good, solid recipe. Thanks, Angela!

Cabbage Pico de Gallo

This was outstanding, even scaling it down to serve just the two of us. Used Napa cabbage instead of green; just judged the amount nof everything by taste. But the flavors as combined worked well together. Thanks, Josh, for a good alternative to regular tomato salsa.

Easy Chicken Taquitos

We found these to be a little bland, although baking them was a great idea. To get them fully crisp, turn and put them under the broiler for a minute or two. Next time will add more spice; DH wants to try cooking them on our pizza stone. Be sure and serve with guacamole or some other dip; salsa alone didn’t cut it.

Beef Noodle Soup

Totally agreed with Linda McLean’s changes, with one minor comment. Instead of pasta, this recipe screams for potatoes instead of pasta. Will definitely be making again, but will add spuds to cook in the soup instead of noodles. As an aside, I gave some of the soup, sans any carbohydrate, to a friend, who added some leftover cheese tortelini. She loved it and has asked for the recipe. Thanks for sharing, Brenda.

Shredded Potato Salmon Cakes

These were wonderful. I had some fresh salmon that really needed to be used and decided to give it a try. I grilled the salmon, let it cool, then shredded. DH and I don't care for bell peppers, didn't have the banana peppers. and I'm allergic to mushrooms -- so left all of them out. Didn't miss them at all. Seasoned the bread crumbs with a little Italian seasoning, and let them chill just a bit before frying. My only complaint was that the the cakes were a little greasy after frying. Next time will try sautéing them with cooking spray and finish in the oven or bake the cakes and then finish under the broiler to get the crust. The crust is an important part of this dish. Chipotle Cream Chicken

Did not include the bell pepper (neither of us care for it) and cut back slightly on the onion. DH would have preferred no onion whatsoever, but in the end agreed that it added a layer of flavor that would otherwise be missed. The flavors were outstanding -- neither one of us found it too hot for our liking. Served it with pasta, which I would do again in a nanosecond; but will try it on rice next time. Easy Turkey Chili

This was outrageously good with added homemade chili powder (from NM chiles) and cayenne. Like everyone else, was dubious about the refried beans -- they absolutely made the dish. The overall flavor is like my favorite canned chile, which is totally unhealthy. Had originally thought this would make way more than six servings: not on a bet! We had three servings last night, and will have the final three tomorrow night. Killer recipe, aworley!

Spicy Black Bean Salad

This was great! Halved the recipe, used homemade salsa and a little less oil (per other reviewers' suggestions). Took it to "lunch with the girls" and everyone enjoyed it. It's great for last minute as most of the ingredients are on hand. Thanks, kmhammer, for a simple, healthy salad.

Healthy Banana Chocolate Chip Oat Muffins

Followed the recipe exactly -- or so I thought until already in the oven. I had left out the milk. In after thought, the milk really isn't needed as the dough had plenty of liquid without it. (I think it was probably due to the fact that I used frozen bananas, which tend to have an abundance of liquid.) In any event, this recipe makes a great dense, healthy breakfast muffin. Love that it's made with whole wheat flour, and the chocolate puts it over the top. Thanks, Nicole, for a good recipe!

Strawberry Oatmeal Breakfast Smoothie

I did as Sarah Jo and ground my oats before adding the other ingredients. I used nonfat milk and frozen fruit, which gave it a wonderful texture. Definitely needs the vanilla extract and a little sugar. My only issue is the calorie content. Don't know if the nonfat milk makes a difference. But a good smoothie nonetheless. Thanks, ASTROPHE.

Curry Chicken Salad

I wanted something for me for lunch for a day or two, not all week; this recipe was a bit difficult to scale down. After playing with the amounts, I ended up with an excellent curried salad, using a little less chicken and a little more curry in proportion for what was called. There was no need to add any additional spice, and, for me, that is very, very unusual. I made it the first time today for two servings. Ate one right away; the other went into the fridge for lunch tomorrow. Didn't have the time to chill it thoroughly today. Although it was quite good, I think that tomorrow, after the flavors have had time to meld and the salad chill completely, it should be that much better. Thanks, Samantha, for a very good, healthy, and quick lunch!

Fresh Zucchini Pasta Sauce

Made this with whole wheat pasta and used more zucchini. I've never been a big fan of zucchini but have to admit this was a great way to prepare it. The zucchini stayed nice and crunchy. DH really enjoyed it.

Blueberry Zucchini Bread

OMG!!! Had an abundance of zucchini and blueberries were on sale. Had a bridge game in the horizon and decided we girls deserved a treat. And what a treat it was! LAUJRA, your recipe is a great base. Just about anything is possible. After reading several reviews, I found Red Hat Milli's making it into a bundt cake -- what a great idea. Using her comments along with others, my chances: subbed 1/2 cup unsweetened applesauce for 1/2 cup oil, used only 1 1/2 cups sugar, half my flour was whole wheat, and upped the baking powder to 1 tablespoon (misread the comment that said 3 tablespoons). Almost cut back on the amount of cinnamon, but given the amount of dry ingredients decided to use the full amount. Good decision. Something to think about: Beat the liquid ingredients with the sugar, and then fold in the dry ingredients until just well mixed. You'll avoid a tough product that way, be it bread, cake or muffins. There was just the perfect amount of sweetness and spice. I had baked it the day before serving and stored it in on a cake server (the kind with the plate for the cake and a lid for the plate). When I removed the lid before serving the aroma was enough to kill for. Unfortunately, this is not as healthy as I would like. Even with using healthier ingredients, the calories only shrinked to 339 calories (assuming 12 servings); but given bridge players and their very unhealthy eating habits, I won't be hesitant to serve this again. Again, great recipe.

This is a very healthy recipe, what with all the vegetables. However, we found it to be a little bland. Were I too make it again, I would definitely add additional spices: Italian seasoning, maybe a pinch of crushed red pepper flakes, something.

Grilled Five Spice Chicken

Used this on a Cornish game hen and it turned out killer! It was, however, very difficult to scale down for just the two of us. And both DH and I were very skeptical about the marinade while preparing it: both the smell and the taste. We decided we'd go ahead and try it notwithstanding our hesitation. We are so, so glad we did. A truly unique flavor. Will definitely make this again, probably for company.
