Luscious Lima Bean Soup
I am giving this recipe 5 stars, HOWEVER, I DID MAKE CHANGES. I didn't use leek or shallots because I only used what I had on hand. I used 1 large onion and 2 cloves of garlic, minced. I added a can of petite diced tomatoes, used chicken stock instead of bouillon, then added fresh thyme (2 tsp) and fresh chopped spinach (3/4 cup) last 15 minutes of cook time. Seasoned with fresh ground pepper and a pinch of salt.

Cranberry Nut Bread I
Made this recipe for Christmas and it was perfect. I love the color it gives the bread and it's not overly sweet. Since the recipe didn't specify I squeezed oranges for the juice, thinking that processed OJ would make it way too sweet. Thanks for a great recipe!

Never-Never Ever-Ever Fail Fudge
I am giving this recipe 4 stars because it is great tasting fudge. However, I would have given it 5 stars if it had better instructions. The mixture has to be boiled for exactly 5 minutes, stirring with a wisk constantly, and then QUICKLY combined with additional ingredients. Honestly, if my husband hadn't been here to take over the stirring at the last stage, I would have thrown a globby mess in the trash, just like some of the other reviewers. The trick is to get it stirred together quickly and completely before it begins to set. It takes a strong arm!
