Caramel Popcorn

AMAZING!! I cut the butter in half, and popped my own popcorn in an air popper (no oil). I did it in the oven, even though many people said to do microwave, and I'm glad I did. I thought about only doing half a batch since 20 cups of popcorn sounded like a ton! But if I had I would have ended up making it the next day-- it was almost gone! Will make for gifts too :)

Harvest Sweet Potato Soup

This was such a great recipe! Very, very simple, but very, very good! I roasted the sweet potatoes first (cut in half length-wise and put skin-side up on a baking sheet, bake @ 400 for ~25min, then peel skin off. Gives such a great flavor, definitely worth the time!), and I also added some carrots, and used an immersion blender (such a great invention!). Served them with Cranberry-Apple muffins from this site, and it was a very fulfilling, flavor-filled meal. Will definitely make this again (and again, and again!) :)

Cranberry Apple Muffins

These had a great flavor, but I'm giving them 4 stars because I changed a number things... Mainly, I made them gluten-free (use 2.5 C GF baking flour, and 1.5tsp Xanthan Gum), also, I used 1/2C applesauce instead of oil, I used dried cranberries since that's what I had, and I cut the sugar to 1C (they were still pretty sweet, so I will use even less next time- the dried cranberries and applesauce add to the sweetness). These turned out great! Served them with Harvest Sweet Potato Soup from this site, and it was a healthy, fulfilling meal! Even with making them gluten-free, they had a nice consistency, and weren't too heavy (which is often a frustration with GF baking!). I will definitely make these again!

Easy Apple Cinnamon Muffins

I'm giving this 4 stars just because I changed the recipe so much, but the flavor is a definite 5 star! First thing is that I made it Gluten Free- instead of all purpose flour I used an equal amount of Bob's Red Mill GF baking flour, and 3/4 tsp Xanthan Gum. I also used 2tsp of Cinn instead of 1, and only 1 apple which was plenty. I used 1/8c oil, and 1/4 applesauce, and (as if that wasn't enough to change) I sprinkled a little cinn/sugar on top rather than the topping to make it healthier. I filled each muffin cup with ~1/4c of batter and they rose to the top of the pan (made 12 muffins). The flavor of these was wonderful and they were relatively light/fluffy!! With not using the topping and cutting down on the oil they are healthier too :) Will definitely make again!

Baked Tortilla Chips

I have made this recipe twice so far and I really like it! The first time I made it using the ingredients listed, but they came out a little burnt. The second time I just used a sprinkle of salt, and baked the same way-- these were great! I made sure to watch them closely the last few minutes to make sure they didn't get to brown. Will definitely make again!!

Eggplant Burgers

I loved this idea! My son and I are gluten free so buying special veg burgers gets so expensive. The first night we ate these as the recipe sugg-- with ketchup and garlic mayo, etc. The next day we had them on rolls with italian cheeses and pasta sauce-- a mock eggplant parm; it was awesome!
