Fantastic and easy recipe!!! I've made it a few times now and have learned that I need to bake the crust first until lightly browned, then add the toppings and bake until the cheese is melted and slightly browned. Otherwise the crust remains a bit too doughy.

Refried Beans Without the Refry

This is a great recipe for what it is - a healthier version of refried beans. Of my family of 4, 2 of us like it, 2 don't. I think it is worthwhile to keep in my rotation as it is so much better than canned beans, and I don't want to make the high-fat lard-laden version.

Hot and Sour Chicken Soup

This was fantastic! I used cooked cubed chicken as I was in a hurry, and it still turned out great. Perfect amount of spiciness with a real kick, but not enough to really bother most people. We didn't care for the flavor of the cilantro garnish with the soup, but it was still fantastic.

Zucchini and Potato Bake

Great recipe! I would bake on cookie sheet covered in tin foil for easy cleanup. Keep the vegetable mixture in a thin layer for even crisping. I would use crushed or minced garlic as opposed to sliced garlic for more even distribution. I used Italian seasoned bread crumbs and think it would be great with some parmesan cheese as well.

Jalapeno Snacks

These snacks had great flavor, but the bacon took quite a bit longer to cook than indicated. I doubled cooking time and my guests still found the bacon to be slightly undercooked. I would suggest broiling until bacon is browned.

Zesty Slow Cooker Chicken Barbecue

This is simply a fantastic recipe! I made this for a casual dinner party and served over warm hoagie rolls. Everyone loved it, and every single person asked for the recipe. This is a great way to serve a large number of people without spending hours in the kitchen!
