Irish Soda Bread

Just took this from the oven. It is wonderful. Not as dense as others I have tried - nice crunchy crust. The only thing I changed was i only used 2 cups of raisins as suggested by others. This was so very easy I will be making it again & again.

Rum or Bourbon Balls

They are just okay - not the type rum ball recipe I was looking for. I agree they are gritty. I even warmed my rum & tried to dissolve all the sugar and it did not help. I also think they are a little strong with the amount of rum called for. I followed the recipe exactly. While they are warm they are easy to work with but as they cool they do need to be worked harder and warmed in your hands to hold shape. I will keep looking for a better recipe than this.

Banana Oatmeal Crumb Cake

Followed the recipe exactly, and would not change a thing. It is a very moist and tasty cake. It is a keeper for sure. The only thing next time I will double it and use a 9x13 only because the 8x8 will probably not last the evening.

Chewy Chocolate Chip Cookies

This is the perfect chocolate chip cookie recipe. The cookies were chewy and taste great. The dough is easy to work with. Cookies did not stick to the baking sheet. Allowed them to cool on the sheet a few minutes and they slid right off. Followed the recipe exactly - does not need changed at all. I can stop looking this is the only chocolate chip recipe I will use from now on.

Baked Rice Pudding

This is a perfect baked rice pudding recipe. The only things i did different were add more raisins and I used canned milk because i had a can I had to use. Did everything else exactly as stated. It is the closest to my Grandma's recipe I have tried. Nice and firm and not too sweet - it is a real keeper.

Banana Crumb Muffins

I added the teaspoon on vanilla & went just a little less on the sugar. Baked them in the Texas size muffin pans - made 6 good size muffins. They were moist and tasted wonderful. Everyone that tried them loved them. This is a real keeper.

Mini Pineapple Upside-Down Cakes

Made these for my Red Hat Party and they were the hit of the day. Everyone thought I was so clever to make them, I almost hated to tell them how easy they were to make. I used the jumbo muffin tins and a pineapple ring fit perfectly.

Marzetti® Hawaiian Slaw

I made this for a Red Hat party yesterday. It was a big hit. Everyone loved it and a few asked for the recipe. I did not have Marzetti's on hand so I used 3/4 cup Miracle Whip and a little wine vinegar.

Grandma Johnson's Scones

Heavenly is all I can say. This is my first attempt at scones and I am well pleased. They are light and flavorful. I did add the teaspoon of vanilla and a little sugar on top, but did everything else as written. I can't wait to try these again with other things mixed in.

Jalapeno Popper Spread

This is wonderful. 5 stars is not enough for this great recipe. I made it to take to a friend's house and 4 of us ate almost the entire thing. I did use some of the changes suggested by others. I used 1/2 mayo - 1/2 sour cream. I could not find canned jalapeno peppers so i used the sliced ones in the jar & chopped them. I increased them amount to 2/3 cup. I used a Mexican blend cheese instead of the parmesan and stirred it into the spread. Topped it with toasted bread crumbs with about 1/4 cup Romano cheese. I had to travel with this so i put it in a crock pot and right before serving put the toasted bread crumbs on top, It was Heavenly. This is a real keeper

Cheese Ring

Made this for a Red Hat party today. Everyone loved it. I used 1 1/2 teaspoon dried minced onion since I did not have any green onions on hand. Also added some chopped pecans. I know I will be making this often.

Puppy Chow I

I had a recipe for this years ago and was trying to find one like it, this sure was not it. I did everything the same as the recipe but did use the slightly smaller box of cereal as suggested, because my store did not have the larger size. It turned into one big clump of mess, not individual bite size pieces like my old recipe did. To save it rather than throw it away i pressed it into a 9x9 cake pan and cut it into squares.

Chow Mein Noodle Bars

Followed the directions exactly as written. Did not have a problem getting them out of the pan. Easy to make, but not one of my favorites. Everyone that tried them said they were wonderful. But they just did not rate a 5 star with me.

Very good but I did change a few things after reading all the reviews. I used half of: sugar, spices & OJ concentrate. To me with those changes it was perfect. I will make this many times I am sure.

Hot Fruit Salad

I made this for a recipe exchange. Everyone raved about it and took home leftovers. I baked it instead of doing the crock pot. I followed the recipe exactly except I added a few pats of butter on the top like I do when I make a fruit pie. Everyone sat around giving ideas of other ways to enjoy this wonderful recipe. Some were: as a pie filling, with a cobbler crust, over ice cream, the list went on & on and the kitchen had a wonderful smell as it baked. Oh I did not bake it 90 minutes only about 1 hr.

Grilled Country Ribs

I wish I could give it more than 5 stars. This was wonderful. Did exactly as the recipe called (even though i thought 1/4 cup hot sauce was over kill it wasn't), Also I did not grill it but put it back in the oven at 350% for 1/2 hour and basted it with the sauce. I only had 2 lbs ribs so I had extra sauce but that was not a problem, served it on the side. This is a real keeper.
