Lebanese-Style Red Lentil Soup

This soup is great! It has a wonderful flavor and texture. I used vegetable stock and a lot less lemon juice (around 1/4 cup.) I decided not to blend it because I liked the texture the way it was when I took it off the stove. I'm sure it tastes just as good blended.

Curried Wild Rice and Squash Soup

My friends and family love this soup. I make it with vegetable broth so my vegetarian friends can enjoy it as well. I also added an extra cup of broth since it gets a bit thick when chilled. Even though I make a double batch, it doesn't seem to last very long!
