Alyson's Broccoli Salad

Superb! I only had rice wine vinegar, which is a mild and light type of vinegar. It worked out just fine and yielded delicious results! I don't like bacon, so I excluded that, and npw I can't wait to share this with friends.

Honey Mustard Dressing II

I have made this recipe using fat free and light mayonnaise. Really it's the mustard and honey that give it flavor anyhow. I have had marvelous results every time. I use it as a salad dressing, dip, preparing potato salad, and in sandwiches. I make about one cup at a time and I usually finish it up by the 4th day! It is a nice and thick dressing that can easily be thinned out with extra lemon juice, honey, and mustard.

I enjoy pea soup, so this was naturally something I had to try. It's got a nice spicy kick to it, and soooo healthy. I didn't use any oil at all, and I added a bouillon cube. The ratio of water to peas was perfect, and I simmered it for 1 hour. Perfect consistency and it thickens when it cools down.

German Potato Pancakes

I used frozen hashbrown shreds as others suggested, and I did have to add more flour to offset the extra liquid. I should have flattened the potato patties to 1/2 inch which probably would have added to the overall crunchy texture. I served this with sweetened apple sauce on the side...yummy!

Broiled Tilapia Parmesan

I practically followed this recipe exactly. I didn't have any lemon and only used FF mayonaise since that's all I had. The parmesan really compliments the fish and what a great mingling of flavors! Quick to prepare and healthy!

Surprise Banana Cake

I followed this recipe exactly. Same measurements, same cooking time, and same oven temperature. Perfect! It's definitely a banana bread texture except not as dense. Instead of mixing the nuts in the batter, I just topped the cream cheese layer with nuts--easier for non-nut lovers to scrape off. I highly recommend a dash of cinnamon which seems to naturally complement bananas.

Blueberry Sour Cream Coffee Cake

This was very good. Instead of a bundt pan, I baked my cake in a 8" springform pan for about 80 minutes at 325F. The presentation of it was wonderful with the streusel on top. I should mention though that this cake is VERY moist when followed exactly and it probably isn't good for more than 2 days (not that it would last that long). Next time I will add more flour (1/2 cup more?) and less sour cream.

Southwest-Style Egg Rolls

I used egg roll wrappers and took into account the "blandess" that others had reported. I mixed in diced jalapenos and added some garlic salt. Absolutely delicious! Perfect vegetarian roll!

Salmon Chowder

Followed this recipe exactly. I agree with a few others who mentioned that this would've been great even without the cheese. It thickened up nicely before I even added cheese - the corn and potatoes have their own starches to make the chowder thick.

Curried Coconut Chicken

A very nice basic recipe. I added tofu and peas to mine (I just really like tofu and peas). Definitely cook the curry in the oil as the recipe states. It helps bring out the curry flavor more.

Oatmeal Craisin Cookies

I love this recipe! I usually don't like oatmeal cookies of any kind, but I tried this one for my friends who don't like chocolate. Some reviewers mentioned it being too sweet so I left out the white chocolate chips and raisins (I just added more craisins). The butter definitely has way more taste than margarine - I wouldn't try this recipe unless you have butter. The texture (baking at 12 minutes) is crispy and chewy. This is THE oatmeal cookie recipe!
