GA Peach Pound Cake

Sooo good! I should've chopped my peaches more thoroughly since the bigger chunks turned to mush within the cake itself. It's a bit too moist especially after a day or two. Should've baked for more than 60 minutes...maybe 65 to 70 minutes. Still tasty though.

Crab and Swiss Quiche

You don't need a crust for this quiche. It was quite tasty but it definitely needs salt. I think I would add spinach or asparagus next time.

Brown Rice Bread

I added 1/2 cup wheat germ and some extra sugar. Otherwise, I followed the rest of the recipe exactly. Nice, chewy texture.

Chunky Peach Spread

I think this would've been better with fruit pectin. The gelatin made it resemble jello, but it tastes great. Not overly sweet like what you find at grocery stores, and the peach flavor really comes through. I split up my batch in tupperware containers and froze the extra.

Grilled Salmon with Curried Peach Sauce

So simple and very flavorful. I used more curry than called for and used "Chunky Peach Spread" from this website. Very good with a side of rice and some asparagus.

Green Bell Peppers stuffed with Tomato Lentil Couscous

How pleasant and so healthy. I used ground Italian turkey sausage instead of plain ground beef. This would've been plenty flavorful without the cheese.

Buttermilk Honey Wheat Bread

I didn't have any problems yielding a fluffy bread. I used bread flour and nonfat buttermilk. I used my breadmaker, but I proofed the yeast in the buttermilk for 15 minutes while I prepped the other ingredients. The little bit of honey offsets any tartness from the buttermilk but this is not a sweet bread. My friends flipped for this bread.

Classic Bran Muffins

Not overly sweet or dense. Nice flavor and very healthy. I skipped the raisins but otherwise followed the recipe. Will keep this as a quick breakfast snack.

Green Onion Cakes

I followed the recipe exactly except I made large pancakes instead of 16 small ones. The salt is just enough to bring out the green onion. I don't serve mine with any sauce. I like them slightly crispy just the way they are. I pan fried them in my cast iron too. It's important to roll the dough into cigars or spirals. This is what makes layers within the pancakes and creates a tender texture. This is terrible as leftovers, so you'd better hurry up and eat them all!

Shrimp and Crab Bisque

This was simple and tasty. I used garlic instead of onion and didn't use any wine. I let the mixture simmer to thicken it up a bit. I agree the texture would be greatly improved by using just one seafood (i.e. shrimp or crab).

Yellow Squash Casserole

Hummingbird Cake I

This tastes like banana bread with pineapple pieces. I cut the sugar down to 1 cup and it was still very sweet. It could've been the bananas I used. Either way, I don't think I'll be making this often. I don't have anything against banana bread - I've just tried better.

Fabulous Orange Cake

This was ok. I subbed the liquer for orange juice and added orange extract. It could've used some orange zest too since it's very vanilla-y (orange was hard to detect). I skipped the white chocolate since I didn't have any, but it still tastes a lot like yellow cake mix.

Slow Cooker Creamy Potato Soup

This was awesome. Since I only added 1 cup of water (well, really chicken broth), I didn't need the extra flour or fluid at the end. The potato's natural starch plus minimal liquid created a chowder consistency...my preference. Remember, crock pots seal in moisture, so it might seem like there's not enough liquid at first, but give it time.
