Mango Shortbread Bars

This is very much like a mango cobbler except softer crust. I like it ok, but I omitted the cinnamon and nutmeg since most reviewers said it made it taste like apple cobbler. This is very easy to cut into bars, and I used 3 different kinds of mangoes. The sweeter,riper ones came out muuuuuch better than the more tart one. If you have tart mangoes, you can add honey instead of white sugar. Again, it was ok tasting, and I'm glad I tried it.

Spicy Indian Chicken and Mango Curry

I really like the sweet undertones contrasting with the spiciness of the curry. The mango puree really adds a lot of thickness without a lot of fat. The coconut adds enough fat on its own! I had to add a dash of salt but very good.

Tastes pretty good but the corn flavor is very mild. It does have a nice golden tone with crispy crust. Next time I would add slightly more liquid and use melted butter instead of shortening.

German Sweet Chocolate Cake I

I made the frosting except used Egg Beaters (1/2 cup) instead of 4 egg yolks because I wouldn't have known what to do with the whites. It was sooo good. I stirred nonstop for 15 minutes and it came together like it was supposed to thankfully. Next time I might cut down on the sugar or use 1/2 sweet and 1/2 unsweetened coconut.

Pineapple Pretzel Salad

This was too sweet for my liking, and I followed the recipe exactly. The sugar and whip cream and vanilla pudding mix are just sugar overload. I'd suggest adding some lemon juice to the pineapple to make it a little more tart and prevent it from browning. I won't be trying this again.

Weeknight Chicken Cordon Bleu

I subbed turkey for the ham and used pepper jack cheese instead of swiss. This made a very moist chicken. I recommend flavoring the bread crumbs if possible because my boyfriend thought this was a little plain. I think adding medium hot breading mix to the bread crumbs would be a tasty addition. Just something for a little extra kick. I also served this with a side of quinoa and purple potatoes.

Buttermilk Pound Cake II

This is a tender pound cake, but I felt like it needed double the extract for flavor. I whipped the butter with sugar and then slowly beat in the eggs to incorporate air and yield a softer cake.

Butternut Squash Bisque

The carrots add a great dimension of flavor to the butternut squash. I barely used any cream, and it would taste great without it too. I added a dash of red pepper flakes and rosemary.

Chinese Tea Leaf Eggs

These turned out lovely. When I first peeled them, the crackles were a very light color, but I noticed that after a couple of hours, the color deepened. I guess oxidation lent itself to some beautiful results! It's not very flavorful, but my family enjoyed it nonetheless.

No Bake Cheesecake I

I made this plain, and it was perfect for an easy, quick dessert. Since then, I've made a tiramisu version (replace half of cream cheese with mascarpone, add kahlua, dissolve instant coffee with cream, top with whipped cream and cocoa) and an oreo version (mix in chopped oreos with chocolate cookie crust). Keep in mind this firms up once refrigerated, so don't let the liquidy mixture take you off guard...it WILL firm up!

Tofu Creamed Spinach

Very good. I used asiago cheese, and I really appreciate the silky texture from the tofu. Soooooo healthy! I used frozen spinach because that's what I had on hand, and I blended the garlic along with the tofu, milk, and cheese. This took no time to finish!

Carrot Soup 'a la Louise'

What a great flavor profile. I didn't have all the dried herbs on hand so I used dried Italian herb mix and forgot to add the cornstarch. I guess I had simmered the soup for so long that it didn't need cornstarch at all. I highly recommend using butter instead of margarine because it adds more richness. I pureed the soup like everyone said. So good, and it ended up being my boyfriend's favorite dish for dinner.

Bacon-Wrapped Asparagus

This was ok. It was hard to get the bacon crisp without overcooking the asparagus. Use wax paper to prevent the bacon from sticking. I much prefer plain roasted asparagus with salt/pepper/olive oil.

Pumpkin Cake

Moist and somewhat tender. Very much like pumpkin bread but a little lighter. I followed the recipe except omitted the nuts because not too many people are fond of nuts. I baked this in a 6 cavity fluted pan to make 3 mini pumpkins. I had to trim some of the bottoms, but the scraps gave me a chance to taste test. I would double the spices because I like my pumpkin goods to pack a punch.

French Apple Bread Pudding

This tastes sooo good, and not eggy at all. I used pears since that's what I had and topped it with a homemade caramel sauce. You can also substitue the water for some cream to make it richer. You can eat this cold or warm, but I prefer warm.
