Salmon and Spinach Fettuccine

I followed the recipe exactly but I didn't have any capers or oregano. Still delish and definitely use fresh parm, not the pre-shredded stuff.

Chococonut Chip Cookies

This was nice and chewy but remember not to overbake if you're going to leave it on the cookie sheet for 5 minutes to cool. Next time I'll cut down the coconut to 1.5 cups and maybe toast them.

Spicy Basil Chicken

The oyster sauce goes a long way so I used garlic powder instead of garlic salt. Verrrry good. Basil makes a difference, and I add some spinach for an extra veggie boost. Yummy!

Sam's Famous Carrot Cake

This is good but I wish I had run my can of crushed pineapples into my food processor because there were some bits that were too large. I didn't use raisins or nuts since I'm not fond of that. Otherwise awesome recipe! Make 2 dozen standard cupcakes and 2 dozen mini cupcakes.

Healing Cabbage Soup

This is a simple recipe, and I used red cabbage since that's what I had. I also subbed carrots for the canned tomatoes since I didn't have tomatoes on hand. I also added some black beans for a little protein. This lends itself to a lot of variety. If you're in the mood for something with a little kick, you can add some sliced sausage as others have mentioned.

Chili Mac Casserole

Great base recipe, but like others mentioned, the spices need to be bumped up. Instead of salt, I used taco seasoning and used a whole tablespoon of chili powder. Add some corn and salsa, and you got something!

Jif® Peanut Butter Blossoms

I followed the recipe and yielded 42 blossoms. A little crispy on the outside with a firm chew. I think 350F @ 10 minutes is all I really needed for my oven. All in all a good recipe if you're out of butter.

Nacho Cheese Sauce

Don't add any salt. This tastes just like that cheese you pump at concession stands, but it definitely needs some jalapenos for kick. I added some taco seasoning which made it taste kind of like Fritos Chili Cheese Dip. Add some salsa. This recipe lends itself to a lot of versatility. If you don't like the taste of American cheese, don't expect to like this.

Old Fashioned Coconut Cream Pie

This was so easy and tasty. I had to improvise with some ingredients I had on hand. I used a combination of heavy cream and coconut milk instead of half-n-half. I followed other users' suggestions and used cornstarch instead of flour. I made sure to mix the cornstarch in cold cream before adding to the heated mixture to avoid clumping. This fit perfectly in a deep dish pie crust.

Homemade Butter

I never realized how easy it was to make butter. It took about 1.5 cup of cream to make 1/2 cup of butter. I added a tiny dash of salt and about a tablespoon of honey. Fabulous! I'm going to have to make some bread now to go with this awesome butter!

Black Magic Cake

This has the same texture as cake mix, very soft and moist. If you want something a bit more dense or a cake to carve, this is NOT your cake. I used Hershey's special dark cocoa and followed the recipe exactly. I also used whole fat buttermilk. One full recipe made 24 mini cupcakes, 12 standard cupcakes, and 1 6"x2" cake. It's not overly sweet, and I topped the cupcakes with strawberry swiss meringue buttercream and used the 6x2" cake to make a black forest cake. This peeled away from the cupcake wrappers just fine, but next time I'm going to grease my cake pan more generously since some of the bottom stuck to the pan.
