Slow Cooker Chicken Taco Soup

I followed this recipe exactly except for using frozen corn (instead of canned) and used salsa (instead of canned tomatoes). It was very tasty, but I think it could have used even more taco seasoning. I used Corona beer, which is a light enough taste for me. I think corn chips would have been a wonderful addition too.

Moist Chocolate Muffins

This was good but it dried out the next day. I'll reduce the baking time to 17 to 18 minutes. I also baked this in a cupcake tin and yielded 12 hefty muffins. The batter is thick, but it is the right texture for muffins.

Creamy Smoked Salmon Pasta

I followed the recipe except I used parmesan instead of romano cheese and cream mixed with water instead of skim milk (didn't have milk). It's quite delicious and you don't need to add salt since the smoke salmon is kind of salty anyway.

Chewy Cocoa Brownies

This has potential to be dense and fudgy with modifications. If using a 9"x13" glass pan, turn the temp down by 25-50F degrees depending on your oven and bake for about 15 minutes.

Turkey and Quinoa Meatloaf

I made this in a mini loaf pan (12 minis) and it was delish. I used lean ground beef and 1 recipe made 12 nice mini meatloaves. Next time I would top it with BBQ sauce instead of the Worcestire paste.

Chicken and Spinach Alfredo Lasagna

This was easy to put together, and it's decadent. I wouldn't make it too often because it does require quite a bit of cream. You can also mix up all the ingredients with spaghetti, and it'd taste just as good.

Hasty Chocolate Pudding

I actually used 1/3 cup sugar and 1/2 cup dark cocoa and soy milk instead of cow's milk. It was easier for me to heat this on the stovetop, and I'm so pleased with the results. This is waaaay better than the boxed stuff.

This was ok. The 1/3 cup sugar is way too much though. For a more bisque-like flavor, I'd replace the cream cheese with heavy cream instead. Maybe the addition of garlic would give it some more oomph.

Chicken with Green Peppers in Black Bean Sauce

The black bean sauce makes it work. I used the jarred black beans to save some time. I omitted the water/bouillon/cornstarch and the soy sauce because black bean sauce is so salty on its own. Add some chili paste for a little kick. Next time I may add a small dash of lime juice.

Chococonut Chip Cookies

This was nice and chewy but remember not to overbake if you're going to leave it on the cookie sheet for 5 minutes to cool. Next time I'll cut down the coconut to 1.5 cups and maybe toast them.

Spicy Basil Chicken

The oyster sauce goes a long way so I used garlic powder instead of garlic salt. Verrrry good. Basil makes a difference, and I add some spinach for an extra veggie boost. Yummy!

Sam's Famous Carrot Cake

This is good but I wish I had run my can of crushed pineapples into my food processor because there were some bits that were too large. I didn't use raisins or nuts since I'm not fond of that. Otherwise awesome recipe! Make 2 dozen standard cupcakes and 2 dozen mini cupcakes.

Healing Cabbage Soup

This is a simple recipe, and I used red cabbage since that's what I had. I also subbed carrots for the canned tomatoes since I didn't have tomatoes on hand. I also added some black beans for a little protein. This lends itself to a lot of variety. If you're in the mood for something with a little kick, you can add some sliced sausage as others have mentioned.
