Chocolate Zucchini Cake II

Reviewed: Jul. 19, 2015
I used sour cream instead of sour milk and baked this for 45 minutes at 325 degrees in a bundt pan. I also upped the chocolate chips to 1.5 cups. The taste is great, and you can't tell that there's zucchini in this. It is highly moist, so I can see why the instructions state to bake in a 9x13 pan .

Buckeye Balls II

Reviewed: Oct. 11, 2014
I followed the recipe, and it was kind of on the soft side. I think these taste better when they're cold. Very sweet.

Delicata Creamy Squash Soup

Reviewed: Sep. 28, 2014
This is so much better than butternut squash bisque. The ingredients are so simple and savory. I didn't use any butter, and it still tasted quite buttery/creamy with the heavy whipping cream. Yummy!

Blueberry Cornmeal Muffins

Reviewed: Sep. 13, 2014
I followed the recipe exactly. This is mildly sweet and be sure to avoid adding too much liquid because the frozen blueberries add plenty more!

Chicken Pot Pie IX

Reviewed: Sep. 10, 2014
I made extra sauce and it was perfect! I topped with phyllo as the crust. I filled this with all sorts of veggies...carrots, potatoes, peas, corn, broccoli.

The Best Thai Curry-Peanut Sauce

Reviewed: Sep. 8, 2014
I followed the recipe except used 1 cup of natural peanut butter because that's all I had. Instead of brown sugar, I used honey which was a great complement. I tossed the sauce on some chicken and zucchini. If you cook the chicken and zucchini together, drain out the liquid before adding the sauce, otherwise a lot of the flavor gets lost. I also added some cilantro to my chicken dish. The fish sauce really is key in bringing out the best flavor.

Blackberry BBQ Sauce

Reviewed: Jul. 28, 2014
I added a dash of Worcestershire sauce because it was too ketchupy for my taste. Adding more blackberry preserves helped get the flavor closer to what I like. Very easy and tasty!

Slow Cooker Chicken Taco Soup

Reviewed: Apr. 15, 2014
I followed this recipe exactly except for using frozen corn (instead of canned) and used salsa (instead of canned tomatoes). It was very tasty, but I think it could have used even more taco seasoning. I used Corona beer, which is a light enough taste for me. I think corn chips would have been a wonderful addition too.

I replaced some of the cream with coconut milk and added some ginger. Wonderful taste!

Moist Chocolate Muffins

Reviewed: Mar. 2, 2014
This was good but it dried out the next day. I'll reduce the baking time to 17 to 18 minutes. I also baked this in a cupcake tin and yielded 12 hefty muffins. The batter is thick, but it is the right texture for muffins.

Creamy Smoked Salmon Pasta

Reviewed: Feb. 3, 2014
I followed the recipe except I used parmesan instead of romano cheese and cream mixed with water instead of skim milk (didn't have milk). It's quite delicious and you don't need to add salt since the smoke salmon is kind of salty anyway.

Chewy Cocoa Brownies

Reviewed: Jan. 6, 2014
This has potential to be dense and fudgy with modifications. If using a 9"x13" glass pan, turn the temp down by 25-50F degrees depending on your oven and bake for about 15 minutes.

Turkey and Quinoa Meatloaf

Reviewed: Mar. 8, 2013
I made this in a mini loaf pan (12 minis) and it was delish. I used lean ground beef and 1 recipe made 12 nice mini meatloaves. Next time I would top it with BBQ sauce instead of the Worcestire paste.

Chicken and Spinach Alfredo Lasagna

Reviewed: Jan. 13, 2013
This was easy to put together, and it's decadent. I wouldn't make it too often because it does require quite a bit of cream. You can also mix up all the ingredients with spaghetti, and it'd taste just as good.

Exchange Gang Pasta with Shrimp

Reviewed: Jan. 12, 2013
This was easy easy to put together with ingredients on hand. There's something that's missing flavor wise but I can't quite put my finger on it, but this is a great start.

Veronica's Hot Spinach, Artichoke and Chile Dip

Reviewed: Sep. 30, 2012
Great dip for a lot of on-hand ingredients. To make it richer, next time I think I'll mix in a half cup of mozarella in addition to the parmesan.

Hasty Chocolate Pudding

Reviewed: Sep. 8, 2012
I actually used 1/3 cup sugar and 1/2 cup dark cocoa and soy milk instead of cow's milk. It was easier for me to heat this on the stovetop, and I'm so pleased with the results. This is waaaay better than the boxed stuff.
