Quick and Almost-Professional Buttercream Icing

This is my favorite buttercream frosting. It's simple to make and never fails. I follow the recipe exactly except I sometimes add a little extra vanilla or sugar. I most recently used this to frost Red Velvet Cupcakes from this site (the recipe that uses instant chocolate pudding) and it was perfect for piping on the cupcakes.

Pumpkin Spice Cookie

A PERFECT PUMPKIN COOKIE! As mentioned by another reviewer, our local grocery store sells these exact cookies for approximately $4 per half dozen. I was on a quest to find a similar cookie and this is it! I followed the recipe and added 1/2 tsp. of pumpkin pie spice and mixed it all together in my mixer until it was smooth. I used a medium sized cookie scoop and got approximately 3 dozen cookies. I baked them at 350 for 15 minutes and the result was fantastic: moist and delicious! I topped them with "Cream Cheese Frosting II" from this site and the family LOVES them. Only 12 hours after making them, they were nearly gone. This is an excellent and simple recipe and I plan on making these throughout the fall/winter seasons! YUM!

Cake Mix Cookies VIII

The possibilities are ENDLESS with this recipe. I've made these cookies five times in the last two weeks and, so far, my favorite is butter pecan cake mix with white chocolate chips and walnuts. The kids like them with chocolate cake mix and either semisweet or white chocolate chips. I plan to keep making these with different combinations. In every batch I've added two tablespoons of vegetable oil and one teaspoon of vanilla. Also, my cookies take between nine and ten minutes to bake. Great recipe; definitely a family favorite!

Home-Style Scalloped Potatoes

These potatoes are delicious and my family of four devoured nearly the whole pan in one sitting! These are the best scalloped potatoes I have ever had, hands down. I made them in a metal 13 x 9 pan; and added some garlic salt and a bit of Italian seasoning to the sauce before layering it with the potatoes. Otherwise, I made them exactly as the recipe stated. I made them with baked chicken so the last 20 minutes of cook time was at 400 degrees and the potatoes came out nice and tender. Thanks for a wonderful recipe!

This is an easy and fantastic recipe. The substitutions I make: penne pasta instead of elbow macaroni; two cans of diced tomatoes instead of stewed tomatoes; I add one can of black beans; and I season it with lemon pepper to add a little zip. Also, I do not add the mushrooms. The kids LOVE it, it's easy to make, and the leftovers are always eaten. Yum!
