Basic Fondue

I was looking for a fondue recipe to try out my new fondue kit, and found a couple 5 star recipes but the cheeses were quite expensive. Then I found this one which is much less expensive and decided to try it. It met my expectations overall. I personally was not crazy about the flavor, which seemed really cheddary and not at all like swiss fondues that I have had. However, I got tons of complements from other guests at the party, who thought it was delicious and were excited to hear that the main ingredients were cheddar and beer. So, if you are looking for an authentic fondue recipe to impress your foodie friends, this is probably not the one - but if you are going to bring it to an ugly sweater party and eat it alongside stew and 3 buck chuck, you will be pleased with the results.

Ukrainian Red Borscht Soup

Excellent recipe! I made it just as written and it was delicious - excellent flavor. I was pleased to see that it turned out quite thick - I remember it being a bit watery last time I had it. I served it with dill which I think is key to the flavor, and with pumpernickel bread. It makes a lot - I had quite a bit of leftovers... something to keep in mind when you are trying to figure out how to scale the recipe.

Autumn Salad

This salad was delicious and a big hit with my friends. We especially liked the pear/creme cheese part. As one friend said, "Pears with creme cheese? How can you go wrong!" However, I agree with the other reviewer who said that there may be too much going on so next time I think I will make just one part or the other - just the salad w/ carrot mixture, or just the pears with filling. Most of my guests took it apart and ate it this way anyways. I used craisins instead of raisins, and would recommend trying it that way.

Best Spanish Rice

They're right about browning the rice before cooking... it really makes a delicious flavor. I have made this recipe several times and always do it a bit differently. My favorite is to skip the salsa and instead start the whole thing out by throwing a bunch of over-ripe fresh tomatoes and other random veggies into some broth and cooking till they get soft, then putting in the rice. You end up with nice big veggie pieces in the rice that way and it only takes an extra 5 mins or so.

Penne, Tomato, and Mozzarella Salad

This was delicious in a mellow, summery way. I used piles of tomatoes. Instead of olive oil, I just used italien dressing, which was cheaper and gave it a really good flavor. The green onions are key.

Broccoli Apple Salad

I thought the salad was ok but not amazing. However, my friends thought it was excellent. I used craisins instead of raisins and salted sunflower seeds instead of walnuts (wow walnuts are expensive!) The craisins were delicious and I would recommend. The sunflower seeds were pretty good but I think walnuts would be better.

Marrakesh Vegetable Curry

Wow, this was amazingly good. I multiplied the recipe by about 5x and cooked this for a big party, and got rave reviews from everybody. I threw in a whole cauliflower and some regular potatoes. I also got confused at the store and bought yams instead of sweet potatoes, but that actually worked with it quite well. The almonds are key for texture.

Pumpkin Soup

I think this soup is the most delicious soup ever. Unfortunately, my family was not super excited about it. I added 2 tsp curry powder, 2 tsp thyme, and 1/2 tsp ground ginger. Sometime, I would like to try putting cashews in it, since I think it would bring out the nutty taste.
