I have been making these for the past 16 years, we use sweet vidalia onions sliced, and depending on how flavorful we want them we either use the regular potatoes or the red potatoes, I myself prefer using the red potatoes, as I always have to make them in a very large part I use a whole stick of butter, and we use garlic-pepper blend and chives. Try different seasoning to tempt your taste buds, you can't really go wrong unless you use something that doesn't go to well with onions and potatoes.
